Ingredients

  1. ½ cup butter
  2. 1 small onion, chopped
  3. 3 cloves garlic, chopped
  4. 1 (10 ounce) package frozen chopped spinach, thawed and drained
  5. 1 (4.5 ounce) can mushrooms, drained
  6. 1 (6 ounce) package herb and garlic feta, crumbled
  7. 1 (8 ounce) package shredded Cheddar cheese, divided
  8. salt and pepper to taste
  9. 1 deep-dish pie shell
  10. 4 eggs
  11. 1 cup milk

Instructions

  1. Preheat the oven to 375 degrees F (190 degrees C).
  2. Melt butter in a medium skillet over medium heat. Add onion and garlic and saute until lightly browned, about 7 minutes.
  3. Stir in spinach, mushrooms, feta, and 1/2 cup Cheddar. Season with salt and pepper. Spoon mixture into the pie shell.
  4. Whisk eggs and milk together in a medium bowl until combined. Season with salt and pepper. Pour over the spinach mixture in the pie shell, allowing egg mixture to thoroughly combine with spinach mixture.
  5. Bake in the preheated oven for 15 minutes. Sprinkle the top with remaining Cheddar and bake until set in center, 35 to 40 minutes longer. Allow to cool 10 minutes before slicing and serving.

Things I did differently: I used fresh spinach and mushrooms and pre baked the crust for 10 minutes. I mixed the ingredients in a bowl instead of in the crust. Wonderful recipe!!

I have made this several times and it comes out perfect every time. I used fresh spinach and mushrooms cooked down after the onion and garlic double the amount of milk and eggs to make two pies, freeze one for later. Yum!

Absolutely delicious, I added broccoli in mine I would have also added some tomatoes but there was no room in the pan, next time I will use deep dish pans. I made 2 so I am freezing one for guests who will be in town in two weeks.

This was so good. We barely had time to tell just how good it was because it was gone within two hours. Making another one today. I did tweak it a little. used cream cheese and my other cheese was a 4 cheese blend. Used fresh spinach instead of frozen

i used fresh spinach and cooked it down with the onions/garlic. I’m not a feta fan so used cream cheese. I needed a good “base” quiche recipe and this one was great!!

Good quiche with rich flavor. I added a bit of prosciutto, as I had it in the fridge. Delicious. Next time I might add just a bit of Dijon for flavor, although that might be too much since the feta is tart and flavorful.

The best! I didn’t have garlic or mushrooms so I omitted them. I used plain goat cheese and sharp cheddar ((about 1/2 C more than called for) I grated the onion, browned with a pinch of Italian seasoning, then baked in pre-baked homemade pie crust. DELICIOUS!

I did almost double the spinach and garlic, omitted the mushrooms, used a healthy amount of green onions as I needed to use them up and used about 5 ounces sharp cheddar. I liked it and will make it again. Next time I will break down the feta more so that it’s smoother and use a tablespoon or so less milk as it was a touch too wet.

I’ve made this quiche a number of times and have always enjoyed. Two eggs and a little less milk us more than enough to fill the pie pan.

Regarding the lady that thought it was bland. It may have been as simple as you didn’t add enough seasoning. There is lots of salt in the cheese but it may have needed more salt and pepper. Eggs and veggies do need a fair bit of salt. 🙂

I added sautéed bacon bits, 2 more eggs and a dollop of sour cream omitting cheese. 1 teaspoon chives and parsley. Ready in 25 minutes in preheated oven at 375 degrees.

I make this often. People love it. As Bailey says I add this and that. I use a Greek seasoning usually too and 1/2 tsp lemon juice. I have also tried the nutmeg as some suggested Parmesan cheese works well with the feta also. Very easy ! Nice at a brunch with a fresh fruit salad.

Excellent – skipped the mushrooms, used regular Feta and added nutmeg as suggested by another reviewer. Family loved it
