Ingredients
- 4 large eggs
- 1/2 cup heavy cream
- Salt and freshly ground pepper
- 1 cup shredded Swiss cheese
- 1 cup grape tomatoes, halved lengthwise
- 2 tablespoons salted butter
- 1 small onion, finely chopped
- 4 cups baby spinach
Instructions
- Preheat the oven to broil. In a medium bowl, whisk together the eggs, heavy cream, 1/2 teaspoon salt and 1/4 teaspoon pepper until smooth. Fold in the cheese and tomatoes and set aside.
- In a medium oven-safe frying pan (I use a cast-iron skillet) over medium heat, melt the butter. Add the onion and saute until softened, about 5 minutes. Add the spinach and cook until just wilted, about 2 minutes. Pour the egg mixture over the spinach and cook until almost set, 2 to 4 minutes. Transfer the pan to the oven and broil until golden brown on top, about 5 minutes. Remove from the oven and turn out onto a serving plate.

Quick to put together, and in my opinion, much better at room temp or reheated in the microwave the next day. I will make them ahead next time as we didn’t care for them straight out of the oven. I subbed whole milk, and used less onion and chopped tomato than called for, and added some dried Italian herbs. I baked mine in a well sprayed standard muffin tin and got eight mini frittatas. Done at 22 minutes.
My sister used this recipe for a brunch in our DAR Chapter and Everyone loved it and had to have the recipe! It was delicious. DID NOt change a thing. Have given the recipe out many times!
Delicious. Made it for Christmas morning. Just added some crumbled bacon.
Just made this. I didn’t actually measure this followed the recipe. And it was perfect
Very good, my hubby gets very concerned when it’s “something ” different he had seconds. Di difinatly going in the rotation.
Great flavor and easy to make!
Have made this recipe many times now and has been one of my go to breakfasts on the weekends and when I have guest over for breakfast.
I have used other types of cheese when I don’t have Swiss and have used chopped tomatoes when I didn’t have cherry tomatoes and it still turns out great.
Thanks Trisha!!!

The flavor was amazing, my family loved it. I will be making this again and again.
I have made this twice now for 2 different Christmas breakfasts with friends and family. It is easy to make, displays beautifully when served and is delicious. It’s a winner Trisha!
Such a pretty breakfast dish. Loved the flavors as well as the colors. Added the turkey sausage as suggested and used cheddar cheese as I did not have Swiss. Even my hubby enjoyed this as he doesn’t think spinach is a breakfast food. Silly man
very easy and yum (I did add some bacon) and thinking about next time like sausage/mushroom/shallots.
