Ingredients
- 2 tablespoons olive oil
- 1 tablespoon cider vinegar
- 1 teaspoon Dijon mustard
- Salt and freshly ground pepper
- 5 ounces baby spinach leaves (about 5 cups lightly packed)
- 1 Granny Smith apple
- 1/3 cup walnut pieces, toasted in a dry skillet over a medium-high flame until fragrant, about 2 minutes
Instructions
- In a small bowl whisk together the oil, vinegar and mustard. Season with salt and pepper to taste.
- Toss the spinach with the dressing until evenly coated then divide the spinach among 4 serving plates.
- Core the apple and slice it into matchsticks. Sprinkle a quarter of the apple pieces on top of each salad. Follow with the walnut pieces. Serve immediately.

Delicious! I did add cranberries and used a mixed greens and spinach combo. I took it to a party and peeps raved over it. I made some more the next day and added chicken to have as a main dish. Wonderful light meal.

This may be my new favorite salad; loved it! Definitely add gorgonzola crumbles, it adds the perfect touch. Will definitely make it again.

I also believe this needed cheese and it did, thanks to another person’s suggestion on here. I added Gorgonzola cheese and it definitely added that much needed flavor. I rated it 4 stars because I thought it was very good but not excellent. It’s the type of salad I didn’t initially like but have an acquired taste for.
Not as tasty as I would have liked. The dressing was really acidic. I think it may have tasted better w/some goat cheese or something else…
The best part about this recipe is the delicious and easy dressing. I always find my dressing to be missing something, but this one went so well with the apples, cheese and nuts. My husband and I really liked it. I’ll be using it again soon!
So fantastic! Made this with mixed greens and wedged the apple instead of matchsticks. Was a perfect complement to the Grilled Halibut with Lemon Basil Vinaigrette!!
I thought it was just OK. Maybe it would have been better with a spring mix instead of all spinach? But very good dressing and loved the apples and walnuts together.
