Spicy Watercress Salad

A deck-warming party inspired the creation of this creamy potato salad. Even friends who don’t typically like potato salad went back for seconds.

Ingredients

  1. 1 cucumber, chopped
  2. 1 red bell pepper, cut into thin strips
  3. ½ red onion, roughly chopped
  4. ¼ cup rice vinegar
  5. 1 tablespoon sesame oil
  6. 1 tablespoon white sugar
  7. 1 tablespoon soy sauce
  8. 1 teaspoon red pepper flakes
  9. 1 dash hot pepper sauce
  10. 2 bunches watercress, stems removed

Instructions

  1. Combine cucumber, red bell pepper, red onion, rice vinegar, sesame oil, sugar, soy sauce, red pepper flakes, and hot pepper sauce in a bowl.
  2. Place watercress on a serving platter or bowl. Pour cucumber mixture over watercress.

I had to modify some spice ingredients but I still used soya sauce, hot sauce, and stevia leaf extract. I used Itlalian salad dressing instead

11.7.16 The title is appropriate because it is indeed spicy. If you have any concerns at all about that, would suggest using half the red pepper flakes, then taste the dressing, and add the other half if it suits your taste. This was lunch today, it’s quick and easy to make, and I thoroughly enjoyed it. Definitely will be made again.
