Spicy Turkey Tacos

Like you, I’m probably constantly looking for new recipes to try out with leftover rotisserie chicken. The leftover lemon pepper rotisserie chicken from your neighborhood grocery shop is elevated to a whole new level with this recipe. As a distinctive main course or appetizer for a luncheon, this somewhat sweet and crunchy salad can be served on a bed of romaine lettuce with sliced ripe avocado or on toasted mini sandwich slices (your choice of flavor).

Ingredients

  1. 1 pound shredded cooked turkey meat
  2. ⅓ cup chopped cilantro
  3. 1 large jalapeno pepper, stemmed and halved
  4. 1 (1 ounce) envelope hot taco seasoning mix
  5. 2 cups chicken broth, or as needed
  6. 6 small flour tortillas, or to taste

Instructions

  1. Combine turkey, cilantro, jalapeno pepper, and taco seasoning mix in a slow cooker; pour in enough chicken broth to almost cover all the ingredients.
  2. Cook on Low for at least 3 hours.
  3. Heat a griddle over medium-low heat and cook tortillas until warmed, about 30 seconds per side. Fill tortillas with turkey mixture.
  4. Use dark and white meat for the turkey.

This was perfect for leftover turkey! We made bowls out of them with “easy cilantro lime rice” and “black beans” (in the instapot) . I did not add spicy taco seasoning (didn’t have it) but made my own regular, from this site. I added jalapenos from a jar because that was what I had and it was all very very good. It was just what everyone was looking for after a couple days of regular leftover eating.

I’ve made it twice. It takes 10 minutes to throw everything into the crockpot and have a nice meal by dinner. I use fresh turkey breast cut into strips. I also make my own taco seasoning and add fresh garlic and onions. I added some black beans to give it a veggie option too. Great basic recipe that can be modified to personal taste. Thanks!

I didnt have leftover turkey so I just used a pound of extra lean ground turkey instead. And I added onion to the crock pot. Otherwise, all the same. And it was DELISH! My husband and I cant wait to have it again!
