Spicy Sesame-Garlic Ramen Noodles

My daughter like this for breakfast, lunch, and occasionally dinner. It is quick to prepare and a hit every time.

Ingredients

  1. 1 (3 ounce) package instant ramen noodles (without flavor packet)
  2. 1 teaspoon sambal oelek (chile paste)
  3. 1 teaspoon minced garlic
  4. 1 teaspoon ginger paste
  5. 1 tablespoon sesame oil
  6. ½ teaspoon toasted sesame seeds

Instructions

  1. Bring 2 cups water to a boil in a large skillet. Add ramen noodles and boil for 2 minutes. Drain noodles in a colander and wipe out the skillet.
  2. Meanwhile, whisk sambal oelek, garlic, and ginger paste together.
  3. Add sesame oil to the skillet and heat over medium heat. Add drained noodles and cook until slightly crispy, about 3 minutes. Add sambal oelek mixture. Cook for 3 minutes more using chopsticks to toss the noodles in the sauce.
  4. Divide mixture between 2 serving bowls and garnish with toasted sesame seeds.
  5. Ginger paste is found in the produce section of your supermarket.

Hmm. I really like the potential this has. The submitter says “can add veggies” but I wonder if doing that messes up the sauce ratio? Followed exact but first sautéd a small, minced zucchini and shredded a couple smaller carrots – transferred to a hot plate to keep warm and followed the rest of the recipe from there. Mixed veggies in when I added the “sauce.” 1 Tsp of sambal oelek and tsp of ginger paste? Didn’t seem to spread well. It was also light on flavor. So maybe I should have doubled? Or? Maybe missing some soy sauce? I think I need to experiment…..Thanks Nicole!!
