Ingredients

  1. 1 pound bulk spicy pork sausage
  2. 1 pound shredded sharp Cheddar cheese
  3. 1 cup almond flour
  4. 2 tablespoons coconut flour
  5. 2 (.25 ounce) packages unflavored gelatin
  6. 1 egg
  7. ½ teaspoon baking powder

Instructions

  1. Preheat the oven to 325 degrees F (165 degrees C). Line a jelly roll pan with parchment paper.
  2. Combine sausage, Cheddar cheese, almond flour, coconut flour, gelatin, egg, and baking powder in a large bowl. Mix to combine using your hands, a stand mixer, or a food processor. Form mixture into uniformly-sized balls (about 1 1/2-inch diameter) and place on the prepared pan.
  3. Bake in the preheated oven until cooked through, 23 to 28 minutes. Remove sausage balls and let cool on the pan until oil is reabsorbed, about 5 minutes.
  4. You can line the jelly roll pan with foil or silicone as well, just never use waxed paper.

I didn’t have sausage so I substituted Ground Chicken with fajita seasoning, peppers adn onions made by Mighty Spark. I comes in 1 lb packages. I also substituted 1/4 tsp of xantham gum for the gelatin.

Nice receipt. I sautéed onions, celery, garlic and mushrooms and after it cooled down, added the mixture in along with some salt and pepper. This added a nice bit of flavor to the sausage balls.

These were delicious. I made them last night and even thought I screwed up and bought maple sausage by mistake, which I hate. These came out great. I made some mini frittata’s along with these

Taste very good. Need to cook on silicon or spray aluminum foil. Couldn’t get off foil in 1 piece lost the crispy bottoms.
