Ingredients
- 2 (4 ounce) tilapia fillets
- 1 teaspoon Cajun seasoning, or to taste
- 6 (8 inch) flour tortillas, warmed
- 1 small red onion, finely chopped
- 1 jalapeno pepper, seeded and finely chopped
- ½ cup shredded lettuce
- ¼ cup salsa
Instructions
- Preheat the oven to 400 degrees F (200 degrees C). Grease or line a rimmed baking sheet with foil.
- Rinse tilapia and pat dry. Rub all sides with Cajun seasoning. Place on the prepared baking sheet.
- Bake in the preheated oven until fish flakes easily with a fork, about 20 minutes. Cut into bite-sized chunks.
- Assemble tacos in tortillas with onion, jalapeno, lettuce, and salsa.

12.30.21 The 400ºF temp is pretty high, and since my filets were on the thin side, I took them out at 12 minutes; they were perfectly done (and tasty on their own). I really didn’t measure the Cajun seasoning, just gave the tilapia filets a pretty heavy shake. I did add some sour cream and shredded cheddar to the tacos, served with some Instant Pot® refried beans, and we were happy with the way this meal turned out.
