Ingredients
- 1 tablespoon canola oil
- 1 small yellow onion, diced
- 2 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon kosher salt
- 1/2 teaspoon chipotle chile powder
- 1/4 teaspoon cayenne pepper
- One 4-ounce can diced green chiles
- Two 15-ounce cans black beans, rinsed and drained
- 1 cup vegetable broth
- 2 tablespoons chopped fresh cilantro
- 1/4 cup Cotija cheese
Instructions
- Heat the oil in a large saute pan over medium-high heat. Add the onion and cook until it begins to soften, about 3 minutes. Add the garlic, cumin, salt, chile powder and cayenne and cook until fragrant, about 30 seconds. Add the chiles, beans and broth and bring to a simmer. Cook, stirring occasionally, until the beans have softened and the sauce has thickened, 5 to 7 minutes. Transfer to a serving bowl and sprinkle with cilantro leaves and Cotija.

This was truly fabulous.!!! The ingredients came to a lovely creamy conclusion. I did not have jarred green chillies, but i had jarred Jalapeno peppers which I sliced and it worked well…….Thank you for challenging the ignorant posts….:). As a diabetic…..this was diabetic friendly….:). I shall have this with plain steamed vegetables and a buckwheat pilaff, It’s a keeper. Blessings!!
Well, I hate giving this dish such a low rating. I really thought I was going to love it. I only changed two things. I dont care for black beans, so I used Pinto beans, I used half of the amount of cumin that the recipe calls for. The cumin was still so overpowering for me. The cumin was my only issue. Maybe I should try it again without. It is a personal issue for me. Not that the recipe is bad.

Great recipe! I didn’t have a can of green chilies so I used a can of rotelle tomatoes and used beef broth in place of the vegetable broth. Everything else was the same. I paired it with Spanish rice. Good quick meal that tastes great and is healthy.
