Being on a diet, I often only use the phrases creamy and pasta on my indulgence days. I quickly made something in the kitchen because I wanted to be able to eat it without feeling bad. It’s tasty and flexible, so you can mix it up however you like! Added red pepper flakes give it a great little bite. Onion would be a terrific addition to this.

Ingredients
- 3 tablespoons butter
- 1 cup long-grain converted rice
- 1 green bell pepper, diced
- 1 onion, diced
- 1 pound ground beef
- 2 (15 ounce) cans tomato sauce
- 1 (14.5 ounce) can diced tomatoes with green chilies (such as RO*TEL®)
Instructions
- Melt butter in a skillet over medium heat. Cook and stir rice in the melted butter until rice is lightly browned, 3 to 4 minutes. Stir bell pepper and onion into rice and cook until bell pepper is softened and onion is translucent, 5 to 8 minutes.
- Break the ground beef into the rice mixture; cook and stir until beef is completely browned, 8 to 10 minutes. Stir tomato sauce and diced tomatoes into ground beef mixture. Cover, reduce heat, and simmer until rice is tender and liquid is absorbed, about 20 minutes.

I used this to make stuffed peppers and put mexican cheese all over it. Yummy!
Made this recipe as directed, but I did add beef bullion to the hamburger as it cooked, chili powder, and garlic powder to taste, and some pickled jalapeños for extra flavor. As written, 4 stars, after additions, 5 stars! Great starting recipe to use and add your family’s own finishing touches.
I used cooked rice, and it worked well.
Trying to duplicate my mother’s Spanish rice and this came very close. I used a can of mexican-style chopped tomatoes w/lime and a can of thin spaghetti sauce; also used sliced turkey sausage instead of ground meat. Nice “kick” to it w/out too much heat. Will fix again, maybe with chicken or shrimp next time.
I don’t want to give something 5 stars unless it is truly exceptional, so 4 stars still means it was excellent and I’d make it again. I didn’t make it exactly the way the recipe called for though. Someone else said the Rotel diced tomatoes with green chilies was too hot so I just used a can of regular diced tomatoes, (I’m not a fan of hot spices). I also used 2 Cups of Basmati rice instead of one because 1 cup didn’t sound like it would be enough, and of course, I added at least 2 extra cups of water in order to hydrate the extra cup of rice that I used. The original recipe seemed like it would be a little bland, without many spices, so I added 1 tsp cumin, 2 teaspoons Oregano, 2 teaspoons salt, 1/2 teaspoon ground pepper, 1/2 teaspoon red chili flakes, 1 teaspoon paprika, 1 small can of sliced black olives chopped, and a handful of green olives chopped. Remember I used 2 Cups of rice instead of one, so these amounts of spices might be a little too much if just one cup of rice is used.
Have made this same recipe for years. You can use any kind of rice you like. We like Basmati.
This is super Yummy and easy for a busy weeknight.:) I did add some chicken bouillon and used pickled sliced jalapenos since that’s what was in the fridge. I would Totally make this again! Thank You KoolChick
Since the lady I cook for doesn’t like thins too hot, I used diced tomatoes, instead of the Rotel tomatoes and diced up a couple of jalapeño peppers to add to the green pepper. Also added a little salt and pepper with the dice veggies and and after the hamburg had browned a little. Then, a couple of minutes before addinf the tomatoes and sauce, i cooked in a taa
I used a vine ripe tomato and a jalapeño instead of Rotel. I put them in with the green pepper and onion. I also added minced garlic and garlic pepper from the McCormick grinder.
I added green chilies and instead of tomatoes I added one cane tomato soup. my husband don’t like alot of tomato chunks . this was awesome .. husband loved it and it was the best I have ever had.. this recipe is a keeper

I doubled the rice to bring to a potluck dinner…added 1/2 cup salsa abd 3 cups water….added herbe de province and garlic powder…2 talb sugar and 2 talb apple cider vinegar….2 beef boullion cubes when browning the hamburg… last thing 1 cup cheddar cheese…ummmm
Wish that I had seen Koolchick’s warning Had never used Rotel tomatoes with green chilis before, and the result was very hot (spicey).. Next time I will use plain tomatoes.
