A nod to Turkish kofta, ground beef laced with coriander, cumin and mint gets transformed into juicy burgers within minutes.

Ingredients

  1. 12 ounces beef chuck, coarsely ground
  2. 12 ounces beef sirloin, coarsely ground
  3. 1 1/2 teaspoons paprika
  4. 3/4 teaspoon ground coriander
  5. 3/4 teaspoon ground cumin
  6. 1/2 teaspoon granulated garlic
  7. 1/2 teaspoon dried mint
  8. 1/2 teaspoon brown sugar
  9. Pinch of ground cinnamon
  10. 1/2 cup crumbled feta
  11. Kosher salt and freshly ground black pepper

Instructions

  1. Heat a large cast-iron skillet over medium-high heat for 20 minutes.
  2. Meanwhile, gently toss together the chuck and sirloin in a large bowl, making sure not to overwork the mixture.
  3. Combine the paprika, coriander, cumin, garlic, mint, brown sugar and cinnamon in a small bowl. Sprinkle the spice mixture over the beef; add the crumbled feta and fold gently to combine. Form the beef into four 3/4-inch-thick patties, each about 4 inches in diameter. Sprinkle both sides generously with salt and a few grinds of pepper.
  4. Place the patties in the hot skillet; do not press down with a spatula. When the patties are seared and browned on one side, flip and cook on the other side until browned, about 3 1/2 minutes per side for medium-rare.
  5. Assemble the burgers using your favorite buns, toppings and condiments.
