Spiced Chocolate-Zucchini Bread

On a hot day, refreshing and not terrible for you! I think this drink tastes better than the expensive commercial version.

Ingredients

  1. 1 ½ cups white sugar
  2. 1 cup vegetable oil
  3. 3 large eggs
  4. 1 tablespoon vanilla extract
  5. 2 cups peeled and grated zucchini
  6. 2 ½ cups all-purpose flour
  7. 3 tablespoons unsweetened cocoa powder
  8. 2 teaspoons ground cinnamon
  9. 1 teaspoon baking soda
  10. 1 teaspoon ground nutmeg
  11. ½ teaspoon salt
  12. ¼ teaspoon baking powder
  13. 1 pinch ground allspice
  14. 1 (12 ounce) bag chocolate chips
  15. ½ cup chopped walnuts

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a loaf pan.
  2. Blend sugar and oil together in a mixing bowl. Beat in eggs and vanilla; add grated zucchini. Stir in flour, cocoa powder, cinnamon, baking soda, nutmeg, salt, baking powder, and allspice. Hand mix in chocolate chips and nuts. Pour batter into the prepared loaf pan.
  3. Bake in the preheated oven until a toothpick inserted into the center comes out mostly clean, about 50 minutes.
  4. You can use pecans instead of walnuts.

This recipe was great. The only different thing I did was to add 1/4 teaspoon of chile powder to give it an El Diablo kick. Also used Dutch process cocoa, amazing! It was great! I thought the batter was a bit much for the loaf pan so filled some in a 12 ct muffin pan, so I had a dozen muffins and this great loaf. Thanks for the recipe.

This recipe is great! My husband loved it. The only charge I did was to add about a tablespoon of instant coffee. The spices add a pleasant punch.
