Butter, milk, or cream are not necessary to make mashed potatoes creamy. You can use chicken broth or stock, although stock has fewer ingredients. These are incredibly healthy and delectable.

Ingredients
- 2 teaspoons oil
- ½ teaspoon black mustard seeds
- ¼ cup chopped onion
- 1 clove garlic, minced
- ½ teaspoon slivered fresh ginger
- ½ teaspoon ground turmeric
- ½ teaspoon chile powder (Optional)
- salt to taste
- 2 cups cauliflower florets
- ½ teaspoon lemon juice (Optional)
Instructions
- Heat oil in a small skillet over medium-high heat; add mustard seeds and cover skillet. Cook until seeds stop popping, 2 to 3 minutes. Add onion to the skillet; cook and stir over low heat until translucent, about 10 minutes.
- Mix garlic, ginger, turmeric, chile powder, and salt into onion mixture; cook and stir for 30 seconds. Add cauliflower; cook and stir for 1 minute. Transfer cauliflower to a microwave-safe bowl and cover bowl.
- Cook cauliflower in microwave until tender, about 3 minutes. Drizzle lemon juice over cauliflower.
- You can finish on the stovetop if you add a little water and steam, or you can increase the microwave time for a softer cauliflower.

This is definitely delicious and healthy too!
I followed the recipe exactly and the family agreed that it was really bland.
East, pretty, and a bit different. Lemon juice made it better. I steamed it in pan as others have done. Thanks!
I made the recipe as directed. While the result was a pretty side dish, it lacked in flavour
Absolutely delicious seasoned with cilantro of course
This is very tasty! Good, rich flavor, not overpowering. Greatly improves your standard cauliflower. Easy to do. Get the lid on the mustard seed quick, though, or they’ll shoot all over the kitchen – lol. I’ll use medium heat next time instead of medium high, as the seeds took about 30 seconds to cook, not 2-3 minutes. Also microcooked it for longer than suggested, as we prefer it a little more tender. Notwithstanding, nice recipe.
it’s actually quite bland given the complexity and fresh ingredients…. not worth the effort.
Love, love, love it! So flavorful and easy too. I was out of mustard seed so I just added about 1/8 tsp ground mustard to the onion sautee just before adding the cauliflower. Served with Fast Salmon with a Ginger Glaze from this site, and lightly seasoned jasmine rice. Will definitely make again, thanks for sharing.
I didn’t have black mustard seed, so just used the jar labelled mustard seed. Because of no microwave, I steamed the cauliflower and added it to the onion mixture. This is a great tasting way to serve cauliflower!
