Spanish Rice with Ground Beef

Ingredients

  1. 1 pound lean ground beef
  2. 3 cups water
  3. 1 ½ cups uncooked white rice
  4. 1 (15 ounce) can tomato sauce
  5. 1 (15 ounce) can diced tomatoes
  6. 1 green bell pepper, diced
  7. 1 small onion, diced
  8. 2 tablespoons chili powder
  9. 1 tablespoon garlic salt

Instructions

  1. Heat a large pot over medium-high heat. Cook and stir ground beef until browned and crumbly, 5 to 7 minutes. Stir in water, rice, tomato sauce, diced tomatoes, bell pepper, onion, chili powder, and garlic salt. Cook over high heat until boiling, about 5 minutes.
  2. Reduce heat, cover, and let simmer until rice is tender, about 20 minutes.
  3. You can use ground turkey instead of beef, if preferred.
  4. It’s great for leftovers in burritos or as a side dish.

This dish turned out very delicious but I did make some changes. Used a can of Ro-Tel tomatoes with green chilis Tomato sauce with Italian seasonings. 1 1/2 Tbs of chili powder 1/2 Tbs of chipotle chili powder for a little kick ! I added minced garlic besides the garlic salt. This recipe is a keeper ! Do take into account the extra liquid in the Ro-Tel tomatoes so adjust the water accordingly.

Pretty classic. I made half of the recipe so we wouldn’t be eating it for days. So I used a small can of tomato sauce and the whole can of diced tomatoes (just drained and use the juice as part of the water.) No garlic salt so substituted about a tsp of garlic powder and one of salt.
