Ingredients
- 1 (12 ounce) can fully cooked luncheon meat (such as SPAM®), chopped
- 1 ½ cups whole wheat all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ¼ teaspoon garlic powder
- ⅛ teaspoon ground black pepper
- ⅛ teaspoon paprika
- 1 cup milk
- 1 cup shredded Cheddar cheese
- 6 tablespoons butter, melted
- ½ cup chopped fresh spinach
- 1 egg
- ¼ cup chopped onion
- 5 basil leaves, chopped
Instructions
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease 12 muffin cups.
- Heat a skillet over medium heat; cook and stir luncheon meat until browned on all sides, about 5 minutes.
- Whisk flour, baking powder, baking soda, salt, garlic powder, pepper, and paprika together in a bowl. Mix luncheon meat, milk, Cheddar cheese, butter, spinach, egg, onion, and basil together in a separate bowl; slowly stir into flour mixture just until batter is mixed. Pour batter into muffin cups until each is 3/4-full.
- Bake in the preheated oven until a toothpick inserted in the center of a muffin comes out clean, about 33 minutes.
- Regular all-purpose flour should work fine.
- I had no problem using a shredded cheese blend. Add more cheese if you want. This is an easy and forgiving recipe.
- If you opt out of using Spam, I would add a few extra pinches of salt. Bacon, ham, or sausage can also be substituted for the Spam.

I made these for a co-worker who loves Spam. He was over the moon! I approximated onion and spinach and got 19 muffins out of recipe. They baked for 30 minutes.
I was intrigued by the Spam, so tried it. I only used 2 T butter, as the luncheon meat becomes a bit oily as it browns. And sauteed veggies at the end. (Added one minced jalapeño). Does not need additional salt. The Spam is plenty salty. I was expecting more eggy, breakfast. It was good, but moving on to another…. Just me.
These sounded too interesting to not make! Delish! After reading how forgiving the recipe was, I went all out. I added a whole onion, extra extra spinach, a carrot, and extra cheese. I minced all my veggies since hiding them is the best way to get my toddler to eat them. I’ll definitely be making again, maybe experiment with bacon, parmesan cheese or different veggies. I was craving spam one day, so I decided to make this recipe. It’s pretty good, but the taste of spam can be overwhelming. I would either replace it with ham, or decrease the spam and add more onions to offset its saltiness.
Taste is wonderful. I added much milk and use ham.
Quite dry. I made them exactly as written. I don’t think I’ll make them again.
I replaced the onion with green onions and the spam with ham, plus I added a large chopped tomato and some chives. The muffins were delicious! Lots of chunks of tasty stuff relative to the amount of dough. A very good base recipe for adding variations. Next time I think bill add some red capsicum.

This recipe is totally forgiving. We really liked the thickness of the recipe. The basil was wonderful but felt you could leave it out with the SPAM in it, but totally have it in the recipe if you used a breakfast sausage. It’s a keeper for sure. One note….don’t use baking paper cups…found out really quick they stick….foil baking cups. LOVED THEM!!!
