The weather is getting cooler, and as usual, my thoughts turn to fall vegetables, with apples at the top of the list. These soft, supple muffins taste like a combination of apple cake, carrot cake, and spice cake. For a quick breakfast, you can quickly reheat these muffins in the microwave on low power. They store nicely.

Ingredients

  1. cooking spray
  2. 1 (16 ounce) package Jimmy Dean® Premium Pork Regular Sausage
  3. 1 cup diced onion
  4. 2 teaspoons poultry seasoning
  5. 1 teaspoon salt
  6. 1 teaspoon ground cumin
  7. 1 teaspoon chili powder
  8. ½ teaspoon ground black pepper
  9. ½ teaspoon cayenne pepper
  10. ½ teaspoon dried oregano
  11. ½ teaspoon dried sage
  12. ½ teaspoon garlic powder
  13. 3 cups stale or toasted cornbread, crumbled
  14. 3 (2.6 ounce) bolillo rolls (Mexican bread rolls), diced and toasted
  15. 1 (14.75 ounce) can creamed corn
  16. 1 cup chicken broth
  17. 1 (4 ounce) can diced green chiles
  18. 2 large eggs, lightly beaten
  19. ¼ cup chopped cilantro

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 2-quart baking dish with cooking spray.
  2. Add sausage to a large frying pan over medium-high heat. Cook and stir with a spatula, breaking apart the sausage until cooked, 5 to 7 minutes.
  3. Mix poultry seasoning, salt, cumin, chili powder, black pepper, cayenne, oregano, sage, and garlic powder into the sausage mixture.
  4. Combine cornbread crumbles and bolillo pieces in a large bowl. Mix in sausage mixture. Add creamed corn, chicken broth, green chiles, eggs, and cilantro; stir to combine.
  5. Transfer stuffing mixture to the prepared baking dish. Cover with foil.
  6. Bake in the preheated oven for 25 minutes. Uncover and continue to bake until golden, about 15 minutes more.
  7. Try adding a can of drained and rinsed black beans or adding jalapeño to up the flavor!
