Southwestern Breakfast Burrito

This quick and simple breakfast with reduced carbs. This breakfast is delicious and has a lot of protein and fiber. While you make the filling, remove the tortillas from the refrigerator so they may come to room temperature.

Ingredients

  1. 2 low carb whole wheat tortillas
  2. 4 eggs
  3. 2 tablespoons cream
  4. 1 pinch salt and white pepper
  5. ¼ teaspoon cumin powder
  6. ½ tablespoon butter
  7. 1 ½ tablespoons salsa, chunky style
  8. 2 ounces Cheddar cheese, shredded

Instructions

  1. In a mixing bowl, beat the eggs with the cream, salsa, cumin and a pinch of salt and pepper.
  2. In a non stick skillet over medium-high heat, melt the butter and then scramble the eggs. Just before they are set, add the cheese and fold-in until it begins to melt.
  3. Lay the tortillas on a flat surface. Divide the eggs equally between the two and place on the bottom third of each tortilla. Fold the bottom third over tucking in. Fold in the two sides and then roll up. Serve.
  4. If you are not on the run and can afford a few extra carbs, then try placing these burritos into a casserole dish, spoon 2 tablespoon of 505 Green Chile Sauce over each and heat in a 350 degrees F (175 degrees C) oven for about ten minutes. Add a dollop of sour cream and serve.

I would recommend heating the tortillas before you eat them or at least putting the finished burrito back on the pan, opening down, to seal the burrito together with heat. Flavors played well together. Heating the salsa in the eggs was a good touch. Better than having cold salsa on a hot burrito.

This is certainly a quick, easy, tasty, and fairly good-for-you breakfast! I liked it pretty well as written, but think you could play with the spices to suit your tastes. Maybe some chili powder or some red pepper flakes for a kick? I also added some chopped tomatoes to the burritos, and that was a good addition. Peppers and onions would be great too! So many possibilities–this recipe is a great starting point! Thank you for sharing!
