The original recipe called for roasting the same ingredients in the oven. My dish tastes great on toast, but it also tastes well with rice, potatoes, or pasta.

Ingredients
- 1 ½ pounds ground beef
- 2 eggs
- ½ cup chopped onion
- ½ cup Italian bread crumbs
- ½ cup salsa
- ¼ cup ketchup
- ¼ cup barbecue sauce
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- ½ teaspoon celery salt
Instructions
- Preheat the oven to 350 degrees F (175 degrees C).
- Mix ground beef, eggs, onion, bread crumbs, salsa, ketchup, barbecue sauce, salt, pepper, and celery salt together in a bowl; transfer to a loaf pan.
- Bake in the preheated oven until golden brown on top, about 1 hour.

Very good meatloaf!!! Very tasty!! I didn’t use all the sour cream (didn’t have enough on hand), and didn’t measure the parmesan cheese. I added some chopped red onion (hubby and I love our onions), and it was great!!

I used Pace Chunky Mild Salsa and it was way too salty. Maybe another salsa would work better. The finished product turned out mushy.

I love this meatloaf! I cook it with ground turkey instead of beef. It’s super moist. I would recommend cooking it for 15 minutes longer uncovered to help evaporate the rest of the juices. Other than that I would not change a thing ! Great weekday meal
This was a good meatloaf overall. I think it just had too much sauce in it, as the finished product was rather moist and falling apart. Next time I would cut down a bit on all the sauces. Also, I thought it called for too much of both salt and pepper; I cut both of those in half, and that was plenty of each.

Love this recipe. It is my go-to one. I find myself making it slightly different each time but mostly based on whatever I have in my pantry. Sometimes it seems more Mexican in flavor and sometimes more Italian.

I make but I substitute Fritos corn chips for the bread crumbs. Absolute love it!
1 1/2 pounds of hamburger does not cook in 1 hr, I usually have to add 20 minutes. I also cut back on the catsup and add 2 Tbl. salsa. Additionally, I use Panko bread crumbs, which helps to not make it so wet.

This will be my new go-to meatloaf recipe. It was excellent. I used salsa with a medium heat level and mesquite bbq sauce. Followed the recipe to a “T”, and I found nothing that I would change; it’s perfect as-is.
I’ve prepared a south-western meatloaf for years, much like this one. Instead of bread crumbs I use crushed Fritos corn chips and some taco spices. I made this the first time for my father. I was just a young girl feeding Dad while Mom was away. He said “that was the best darned meatloaf I’ve ever had, but don’t tell your Mom I said that”. They are both gone now and I think of Dad when I make this meatloaf. Thanks for the memories Dad.
I have modified this recipe to use ro-tel instead of salsa and more spicy bbq sauce than ketchup in both loaf and cupcake sizes and it’s awesome! Pop a little garlic mashed potatoes on top and the cupcakes are a mad hit, plus, you can freeze the naked cupcakes for a quick snack at a later date.
Very tasty with a little kick. I added extra cornflake Crumbs, soft but not falling apart. May try with one egg next time.
We love this recipe my kids used to always complain when I made meatloaf for dinner until now, when I make this recipe I hear compliments not complaints! I did not make any changes except I add BBQ sauce on top towards the end of the cooking time
I thought this was really good but I added ranch dressing to give it a little more pop.
