Ingredients
- 1 tablespoon vegetable oil
- 4 skinless, boneless chicken breast halves
- 1 (10 ounce) can diced tomatoes with green chile peppers
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (8.75 ounce) can whole kernel corn, drained
- 1 pinch ground cumin
Instructions
- Heat oil in a large skillet over medium-high heat. Add chicken breasts and sear for 2 to 3 minutes per side.
- Add tomatoes with green chiles, black beans, and corn. Reduce heat and let simmer until chicken is cooked through and the juices run clear, 25 to 30 minutes.
- Sprinkle with cumin before serving.

This recipe was really good with a bit of tweaks. I added garlic, onion, and chili powder. I also added coriander, slap your mama, and ground pepper. I added green, orange and red bell peppers. Finally I added chicken broth and served it with jasmine rice. Winner winner chicken dinner.
This was rather bland like others have said. I did shred the chicken and make them into wraps. I used cojita cheese and a little taco seasoning to help.

I made this into a burrito filling. I omitted the corn, and layered the mixture on a bed of Spanish rice. Easy and delicious!

I cubed the chicken and seasoned it with garlic, onion, cumin and smoked paprika before sauteing. I also used a can of seasoned beans (undrained). This went over really well with family.

Quite good. .spiced it up relative to the original with additional cumin, chili powder, onion powder, grated garlic, salt, chopped jalepano, chopped fresh cilantro . .but a simple, easy base to work with and improve upon!
This was surprisingly good for the lack of seasonings. The chicken absorbed the tomato and bean mixture. I didn’t make it with corn because I can’t eat it. Even my daughter who is picky loved the chicken.
This is very easy and tasty but it definitely needs more seasoning such as chili powder, paprika, onion powder, garlic powder and more cumin. The chicken turns out very moist!
My family enjoyed this recipe! I did cut the chicken into cubes prior to cooking simply to make it easier for my kids to eat. I also added two cloves of minced garlic and some taco seasoning. It gave it a nice flavor. I served it over rice to round it out as a complete meal.
