This delicious pimento cheese with jalapenos can be used as a topping for crackers, to flavor grilled cheese sandwiches, or to go with your preferred fried green tomatoes.

Ingredients

  1. 2 cups shredded extra-sharp Cheddar cheese
  2. 8 ounces cream cheese, softened
  3. ½ cup mayonnaise
  4. 1 (4 ounce) jar diced pimento, drained
  5. 1 jalapeno pepper, seeded and minced (Optional)
  6. ¼ teaspoon garlic powder
  7. ¼ teaspoon ground cayenne pepper (Optional)
  8. ¼ teaspoon onion powder
  9. salt and black pepper to taste

Instructions

  1. Gather all ingredients.

I used pickled jalapenos instead of raw. A milder flavor but effective. For a creamier spread add a little boiling water to the recipe as you combine – not too much or it will become pimento cheese soup. ( I got this last tip from the Duke’s sandwich shop in Greenville, SC, the home of Duke’s mayo and the only mayo to use for Pimento Cheese.)

This was super-easy to make, took less than 10 minutes and that included shredding the cheese. I omitted the cayenne and the jalapenos as I don’t care for either. Tastes great immediately, but I am looking forward to it the next day as the flavors meld together.

Love it! I did change it a little. Instead of onion powder, I used one green onion finely chopped and instead of jalapeno pepper, I used hot sauce. Really good!

I love this recipe I just throw everything into the mixer and let the scraper blade go it mixes everything together great. I’m trying to watch my salt intake so that was the only thing I left out.

I did have to replace the mayo with a sugar free and oil free salad dressing ,(health issues)and used my own home grown red onion thinly sliced. Dumped everything into my blinder and WOW, best ever. In my opinion the ratio of cheddar to creme cheese and mayo was too high. I used 1/4 c mayo 4 oz of creme cheese and a little over 2 cups of sharp cheddar. Thanks for a great starting point.

Delicious. No need for extra salt. Also, you can cut up roasted red peppers and use instead of the little jar of pimento. They come in a big jar and last a long time in the refrigerator.
