Sourdough and Banana Pancakes

A filling and delightful breakfast for two hungry people! Perfect for when you have an overripe banana and need to use up some beginning. My version includes little chocolate chips.

Ingredients

  1. ¾ cup all-purpose flour
  2. 1 ½ tablespoons white sugar
  3. ¾ teaspoon baking soda
  4. ¼ teaspoon salt
  5. ¼ teaspoon ground cinnamon
  6. 1 ripe banana
  7. ½ cup sourdough starter
  8. ½ cup sour cream
  9. 1 egg, lightly beaten
  10. 2 tablespoons butter, softened
  11. ½ teaspoon vanilla extract
  12. ½ cup milk, or as needed
  13. 1 tablespoon butter, melted, divided

Instructions

  1. Whisk flour, sugar, baking soda, salt, and cinnamon together in a large bowl.
  2. Mash banana in another bowl. Stir in sourdough starter, sour cream, egg, 2 tablespoons butter, and vanilla extract. Add to the flour mixture and stir until just combined. Mix in milk gradually until batter is pourable but some lumps remain.
  3. Heat a griddle over medium-high heat. Grease lightly with melted butter. Pour 1/4 cup batter onto the griddle for each pancake, keeping them 2 inches apart. Cook until bubbles form and the edges are dry, about 2 1/2 minutes. Flip and cook until browned on the other side, about 1 minute. Repeat with remaining butter and batter.

So delicious. I love banana pancakes. I left out the sugar as I found they were sweet enough w/ the banana. I used 1/4 whole wheat flour and 1/2 cup AP flour. I used my discarded sd from the fridge which worked well. I will be making these again. Yumm!

Recipe is awesome! Used more starter and less flour to decrease gluten. Didn’t have sour cream but Greek yogurt worked great. Use milk just to adjust consistency (I only needed a splash). Also I used coconut oil and butter on the griddle. Mmm mmm good!
