Snow Miser Smoothie Bowl

This is the only dessert for you if you love coconut and chocolate! Cocoa and coconut combined for a decadent and cooling dream! Note: Spread coconut in a small pan and toast in a 375° oven for 10 minutes, or until brown.

Ingredients

  1. 1 small banana
  2. 1 small apple – peeled, cored, and cut into chunks
  3. 1 small pear – peeled, cored, and cut into chunks
  4. 3 cubes ice
  5. ½ cup plain skyr (Icelandic yogurt)
  6. ¼ cup grated fresh coconut, divided
  7. 1 teaspoon blue spirulina powder
  8. ½ white dragon fruit

Instructions

  1. Combine the banana, apple, and pear in an electric blender. Add ice cubes, skyr, all but one big spoonful of coconut, and spirulina.
  2. Remove 3 or 4 balls of dragon fruit using a fruit baller, then add the remaining dragon fruit to the blender. Blend until smooth. Pour into a bowl. Top with reserved dragon fruit balls and remaining coconut.
