Nowadays, there are so many kitchen appliances that it’s simple to forget that boneless, skinless chicken thighs can be cooked well in your broiler. Early in the morning, marinate the chicken thighs, and your meal will be ready under the broiler in about 10 minutes. Prepare the rest of your dinner while you start the salsa so the vibrant flavors can combine. A fantastic companion for this dish is lime-cilantro rice.

Ingredients
- 2 large sweet potatoes, peeled and diced
- 2 tablespoons butter
- ¼ cup white sugar
- 1 teaspoon ground cinnamon
- ½ teaspoon ground allspice
- 1 Granny Smith apple – peeled, cored and sliced
- ⅛ cup milk
Instructions
- Place the sweet potato in a medium saucepan and fill with enough water to cover the potatoes. Bring to a boil, reduce heat to medium, and simmer for about 20 minutes or until tender. Remove from heat, drain and set aside.
- Melt butter over low heat in a small saucepan. Mix in the sugar, cinnamon and allspice. Add the apple slices, cover, and let simmer for 5 minutes, or until the apples are tender. Mix the apple mixture into the drained sweet potatoes along with the milk. Mix well using an electric mixer or just a fork until potatoes are mashed.
- As a variation, you can mix in cloves or nutmeg. This is also delicious topped with brown sugar and pecans.

I’ve always been confused with my children happily eating sweet potatoes when they were babies and toddlers, then turning up their mose at them. I didn’t tell them what this was, and they loved it.
OMG, I loved this recipe and so did my husband.
Added pecans mixed with butter on top. My Bunco girls (12) all loved it. I then took it to church for harvest potluck and there was nothing left to bring home!
I’ve made this several times and everyone loves it. The only difference is that I use maple syrup instead of the white sugar. Delicious and fast!
Dessert on a dinner plate!
I added another whole apple to the recipe
Tastes just like sweet potato pie!!! Definitely making this more often!!!
No sugar. Cut the allspice and cinnamon in half. The flavors were nice and subtle; could still taste the apple and sweet potatoes. Any more spices would have been too much.
Will make again but I did omit the sugar……no need with sweet potatoes & apples!
Great way to make sweet potatoes! I have doubled and tripled this recipe and it comes out fantastic every time. My sister and I both make this regularly. Our whole family loves it!
I make this all the time for my family. We love it! I usually put in more apples (any kind) than it calls for, and I use stevia to sweeten the apples (works fine). What makes this delicious is adding splashes of half-n-half instead of milk.
This is good as a side dish, not a dessert
This is mine and our entire families favorite side dish. One the kids are sure to love. Taste like apple pie and pumpkin pie mixed… that is our thought
I’m not a fan of sweet potatos but this was delicious. Everyone loved it!
Excellent recipe. Would probably make a nice pie filling. I may investigate. Will also try it out in the slow cooker.
I made this a few days ago for Thanksgiving and it was a hit. I wasn’t planning on making it but it was really easy to make and I already had all the ingredients on hand so I just decided to go for it. I loved it and I’ll definately make it again because it take so little time and effort and the results are very good.
Yummy, yummy, yummy! I love sweet potatoes – my hubby not so much, although I said he liked this recipe. I made it following the directions, no modifications, and it turned out really good. Definitely going to make again, although probably only during the fall and winter.
I was looking for something different as an anniversary dinner. I made this dish with roasted red pepper, broccoli and oven-roasted chicken. I was not sure what sauce to use with the chicken, so I made a simple garlic/butter sauce that was complimented by the potatoes perfectly. My boyfriend loved this dish – he said there was such a great mix of flavours and begged me to make it more regularly!
Great recipe! I don’t think I cooked the apples long enough because they didn’t mash very well. Otherwise its very tasty.
I did not care for this recipe.
What an absolutely wonderful surprise. I don’t know that I’m going to make sweet potatoes any other way. Yum! My husband loved these as well. UPDATE- I went out of town and my husband asked me to make a huge batch so he could eat it throughout the week. And then I made it again for Christmas and it was yet another hit. This is a staple for sure!
