Yield: 12 doughnuts

Ingredients

  1. Cooking spray
  2. 1 cup all-purpose flour
  3. 1/3 cup sugar
  4. 1/4 teaspoon baking soda
  5. 2 packets hot cocoa mix (5 tablespoons)
  6. 3/4 cup buttermilk
  7. 1 large egg
  8. 2 tablespoons unsalted butter, melted and cooled
  9. 1/2 teaspoon pure vanilla extract
  10. 1 cup semisweet chocolate chips
  11. 1/3 cup heavy cream
  12. 1 sleeve graham crackers, crushed
  13. 6 jumbo marshmallows, cut in half

Instructions

  1. For the doughnuts: Preheat the oven to 350 degrees F. Spray two 6-cavity doughnut pans with cooking spray (or bake in two batches).
  2. Whisk together the flour, sugar, baking soda and cocoa mix in a large bowl. In a spouted measuring cup, whisk the buttermilk, egg, melted butter and vanilla. Pour the wet ingredients into the dry and mix with a spatula until just combined. Transfer to a gallon-size resealable plastic bag and snip off one of the bottom corners (you can also use a piping bag). Pipe the batter into the prepared doughnut pans.
  3. Bake until the doughnuts are puffed and a tester inserted into the center comes out clean, about 10 minutes. Cool in the pans on a wire rack.
  4. For the glaze: Meanwhile, combine the chocolate chips and cream in a heatproof bowl set over an inch of simmering water. Heat until melted, about 10 minutes, then stir until smooth.
  5. Place the crushed graham crackers in a shallow bowl. Dip the tops of the doughnuts first in the glaze and then in the graham crackers. Top each doughnut with a marshmallow half, cut-side down, and toast the marshmallows with a kitchen torch before serving.

These were good, but baking some dough in a circle doesn’t make something a doughnut. If you can get over the fact that this is basically a circle muffin with s’mores toppings, you’ll really like it 🙂 also I found that this was enough batter for 6 donuts, I didn’t squeeze every last bit out of the bag, but I think maybe it would have been 8 tops. Also, I used 1.2 normal big marshmallows, but I think a bunch of little ones would be even better bc the marshmallows really catch on fire before they get all melty (just like a campfire lol)
