Ingredients
- 2 teaspoons vegetable oil
- 8 eggs
- 1/2 cup crumbled smoked salmon
- 2 tablespoons cream cheese, softened
- 1/2 cup chopped green onions, divided
Instructions
- Heat oil in a large skillet over medium heat. Combine eggs and salmon and cook until soft. Add cream cheese and mix until a smooth texture, add 1/4 cup green onions and scramble. Serve on a plate and garnish with the remaining 1/4 cup green onions.

I made this for my husband & me today. We both absolutely LOVED it!!
I used butter instead of vegetable oil & only 4 large eggs, added a little extra
cream cheese & garnished with capers before serving. Also, I made potatoes
O’ Brien (Ore Ida frozen) & English muffin buttered & toasted under the broiler
to go with it. What a meal! Great flavor & very gourmet. It was what I would
expect in a 4-5 star hotel or on a cruise. I highly recommend this recipe.

We went to Voula’s Offshore Cafe and had this dish and the Hobo. The food was wonderful and the Scramble was very easy to make at home and tasted great!
