Smoked Salmon Tea Sandwiches

Ingredients

  1. 1/2 pound unsalted butter, room temperature
  2. 1/4 teaspoon minced garlic
  3. 1 tablespoon minced scallions (white and green parts)
  4. 1 tablespoon minced fresh dill
  5. 1 tablespoon minced fresh flat-leaf parsley
  6. 1 teaspoon freshly squeezed lemon juice
  7. 1 teaspoon kosher salt
  8. 1/4 teaspoon freshly ground black pepper
  9. 1 loaf dense 7-grain or health bread, unsliced
  10. 8 slices smoked salmon

Instructions

  1. For the herb butter, combine all the butter ingredients in a mixer fitted with a paddle attachment. Beat until mixed, but do not whip. 
  2. For the sandwiches, have the store slice the bread lengthwise on a meat slicer into 1/4-inch-thick slices. (If that isn’t possible, you can slice it crosswise with a very sharp knife.) 
  3. Lay out 8 slices of bread and spread them all with a thin layer of herb butter. Place smoked salmon on 4 of the slices. Top with the other 4 slices of bread, butter side down. Place the sandwiches on a baking sheet and wrap with plastic. Refrigerate until the butter is very cold. Place the sandwiches on a cutting board. With a very sharp knife, cut off the crusts, cut each large sandwich in half crosswise, and then cut each half diagonally twice to make a total of 8 small triangles. (If the bread was cut crosswise, follow the assembly directions, then cut off the crusts and cut diagonally, twice, to make 4 small triangles.) Serve chilled.

Made these for a holiday party and the platter was empty by the end of the night. A friend even requested them at all future gatherings. Was kind of lazy and just bought some good whole wheat bread from the store and they still were banging! And the best part is the left over butter makes for a great compound butter to flavor veggies or meat.

Made second time and added wasabi…cut each crustless sandwich into 4 triangular pieces. Again…great texture and flavor with the quick impact of wasabi with salmon texture.

I thought these were okay. I wasn’t really satisfied with the herb butter. Really make sure the butter is nice and soft and at room temperature. Because I found it very difficult to mix it.

After adding all the herbs and seasonings, i felt it tasted like regular butter. The taste of the thin slices of salmon, I thought, got really masked by the bread…

It was also tough for me to spread the herb butter mixture on the sandwiches and it felt very fattening when I was eating these sandwiches.

I’m sure a lot of people might like these, and they were very elegant and sophisticated looking, but to me they tasted just so-so…

I might try this one again, listening to one of the comments below and use cream cheese instead of butter and double the amount of salmon. Now that seems like it might be yummier!!

i had 6 people over and ALL of them went crazy over it, ALL OF THEM!! i even had to send them the recipe that evening cuz they plan on using it for upcoming events!! the herbed butter is so good it can be eaten alone LOL. i slightly toasted the bread before i made the sandwiches which gave it a great crisp, i highly recommend you do that as well 🙂 INA UR THE BEST!!!

Delicious, but FANTASTIC when made with cream cheese instead of butter! Double the salmon and make sure you use a hearty, grainy bread. It makes all the difference. I also double the scallions. Nothing but compliments, even from those who don’t care for salmon.
