Ingredients
- 4 tablespoons olive oil
- 2 cloves garlic, peeled and crushed
- 1 ½ teaspoons dried oregano
- 1 teaspoon smoked paprika
- 1 teaspoon hot sauce, or to taste
- 4 large potatoes, cut into wedges
Instructions
- Preheat the oven to 425 degrees F (220 degrees C). Place a baking pan in the oven to heat up.
- Mix olive oil, garlic, oregano, smoked paprika, and hot sauce in a large bowl. Toss potato wedges in the oil until well coated.
- Pour wedges into the hot baking pan.
- Bake in the preheated oven until crisp and golden, about 40 minutes.
- Peel the potatoes or not. It’s up to you!

I had to modify this to accommodate what I had in the kitchen today, no fresh garlic just powder and no oregano on hand either but that being said, these were great! Only wish I had cut them a little more thick OR shortened the cooking time by maybe 10 min. All in all, a great side dish for many meals (burgers for us today) family classic!

10.27.19 Really enjoyed these potato wedges. I did add a little salt and pepper and bumped up the hot sauce to suit our taste preference. I checked for doneness at 30 minutes, and they were browned up nicely and cooked through, so I’d suggest you take a look sooner than 40 minutes. Served today with Sweet and Spicy Sriracha Aioli on this site which made a great dipping sauce. I certainly can see these wedges as a side dish, but they’d also be a great item for Game Day snacks.
