Slow Cooker Taco Soup with Ranch Dressing Mix

This taco soup recipe makes a delicious soup that closely resembles tacos. In fact, it makes wonderful taco meat if the tomato juice is left out. In addition, a saucepan may be used in place of a slow cooker to prepare it. If preferred, serve with chips and shredded cheese.

Ingredients

  1. 1 pound ground beef
  2. 1 (1.25 ounce) package taco seasoning mix
  3. 1 (1 ounce) package ranch dressing mix
  4. 1 (15.5 ounce) can corn, undrained
  5. 1 (15.5 ounce) can black beans, undrained
  6. 1 (14.5 ounce) can diced tomatoes and green chiles, undrained
  7. 1 (15 ounce) can sliced black olives
  8. 1 onion, diced
  9. 1 green bell pepper, diced
  10. 1 cup tomato juice

Instructions

  1. Heat a large skillet over medium-high heat; cook and stir beef until crumbly, evenly browned, and no longer pink. Drain and discard any excess grease. Transfer beef to a slow cooker and sprinkle with taco seasoning mix and ranch dressing mix.
  2. Add corn, black beans, diced tomatoes, and green chiles, all with their liquid, to the slow cooker. Stir black olives, onion, bell pepper, and tomato juice into ground beef mixture.
  3. Cook on Low until vegetables are completely tender, about 5 hours.

This was really great surprise. My family loves tacos, and I love soups, who could ask for anything better. I made a side of yellow rice to pour the soup over, if desired, and a side guacamole for the nacho chips. The blend of flavors was muy buenos, compañeros chefs!

I really liked this. Made it for tacos so left out tomato juice. My husband doesn’t like olives so left them out but added a can of kidney beans. It was delicious and was able to freeze another nights meal. Will be making this again and again

This was super tasty. I have a taco soup recipe already, but loved this version also. Full of flavor! I added 2 c beef broth to make it more of a soup consistency is all. I also cut down a bit on the olives but that is a personal preference. Thank you for the delicious and easy recipe!

Very flavorful recipe! I substituted ground turkey for the beef and added 2 Tbs of Dutch cocoa powder to give a little richness to the end result.

This recipe is one of the best soups, my family loves it and asks for it on a regular bases. You can change it to suit what your family likes. Just remember to not leave out the Ranch Dressing it makes a big difference.

I made this because I was looking for a pantry staples type of meal . It fit the bill perfectly . However , I did tweak it a little . I omitted the olives and bell pepper just because I didn’t have any . I added a fresh chopped jalapeño and used crushed tomatoes 28oz can in place of Rotel . I also added 2 extra cups of tomato juice for a thinner soup and a tap of salt and 2tsp of cayenne . Just cuz we like it spicy !

This was awesome. We like a little heat so just a couple of changes. First – get the Hot and Spicy Old El Paso Taco mix. I used one 20 oz. can of Black Beans vice the 14.5, two cans of the original Rotel with Green Chilies, and an additional 1/2 cup Tomato Juice. Very nice flavor. We will make again this winter!

I did not like this soup. I will not be making it again. It was too much. I crushed up tortilla chips to put on top. I also added some sour cream. I still didn’t like it. Sorry.

Very good! I didn’t have tomatoes with green chilis so I added two tbsp. of garlic chili sauce for the heat.

I made a few changes. No olives, large can of tomato sauce not juice, and a little water. I also used ground turkey and fajita seasoning instead of taco. I like the favor better, thats what I use for tacos! It was great on a cool fall night, even my picky 6 year old gave it two thumbs up!
