Slow Cooker Steak Fajitas

The beef always turns out tender and delicious in these slow cooker fajitas, which will melt in your mouth! Serve alongside salsa, guacamole, and/or sour cream. If the spice is too overpowering, use sour cream.

Ingredients

  1. 1 (1 1/2-pound) beef flank steak
  2. 1 (8 ounce) can chopped tomatoes
  3. 1 onion, sliced
  4. 1 green bell pepper, sliced into strips
  5. 1 red bell pepper, sliced into strips
  6. 1 jalapeno pepper, seeded and chopped
  7. 2 cloves garlic, minced
  8. 1 teaspoon chili powder
  9. 1 teaspoon ground cumin
  10. 1 teaspoon ground coriander
  11. ¼ teaspoon salt
  12. 6 large flour tortillas, or as needed
  13. 1 cup shredded Mexican cheese blend

Instructions

  1. Cut flank steak into 6 equal portions and place in a slow cooker. Add tomatoes, onion, bell peppers, jalapeno pepper, garlic, chili powder, cumin, coriander, and salt.
  2. Cook on Low for 8 to 10 hours, or on High for 4 to 6 hours, until steak is fall-apart-tender.
  3. Remove steak and shred. Return to slow cooker.
  4. Serve hot with tortillas and shredded cheese, allowing everyone to make their own fajita.
  5. For a spicer version, substitute a serrano pepper for the jalapeno.
  6. Substitute corn tortillas for the flour tortillas if you like.

Definitely want more heat but can add at end. Pretty soggy meat and in description, you say serve with sour cream, guacamole, and/or salsa. In the picture you show cheese, green onions and sour cream. In the recipe you call for cheese . Very confusing.

I’ve been cooking since before they invented stoves. I make good grilled fajitas, but I needed quick and easy and set it and forget it. I made these per the recipe. These were amazing. My husband has asked me to make them again. A friend of mine (he’s Mexican) who is really critical about Mexican food came over, and he even commented how good they were. BUT…the leftovers were even more truly amazing! We made burritos with and without beans and rice, and they were so good. I had a bit still left, so I scrambled eggs and added cheese and made a breakfast burrito. Just excellent. I’ve got a cooker going right now set to feed a bunch of teenage boy athletes. Highly recommend this recipe!!! Btw, I’ll just hook up my pancake griddle to heat the flour tortillas when the boys are ready. I can do 8 at a time. Fast. Easy.

These had a decent flavor,but it wasn’t something I want to try again,due to the heavy broth in the slow cooker that some would claim is the ‘cats pajamas.’ However the method of crockpot fajitas just didn’t do it for us. I might try another reviewer suggestions and crisp the fajita meat in the broiler,or my cast iron skillet than place the meat in the slow cooker. I’m on the fence on this one!

Good lord! If you had asked me yesterday “what is the most labor intensive way to ruin a steak?” i would not know how to answer. But as i loaded beautiful pieces of flank steak into the crockpot it felt wrong. The end result was unappealing. I did not care for this recipe at all.

My whole family enjoyed it. I was worried about it being too spicy so I left out Jalapeño pepper & added more chili powder. My daughter doesn’t like things too hot. Served on flour tortillas with refried beans & all the typical fajita sides. I just drained well before serving. Easy to make & I love the crockpot as my kids have different schedules with sports.
