Slow Cooker Pork and Sauerkraut

Simple potatoes and sauerkraut slow-cooked together. For simple cleanup, put a slow cooker liner in there. If you don’t want to use whole baby potatoes, this recipe is also great when served with mashed potatoes. Because leftovers taste even better the next day, I usually double the recipe.

Ingredients

  1. 1 (1 pound) whole pork tenderloin
  2. 1 (24 ounce) bag baby potatoes, unpeeled (Optional)
  3. 1 (20 ounce) can sauerkraut, undrained
  4. 1 cup water, or more as needed
  5. ¼ cup butter, cubed
  6. salt and ground black pepper to taste

Instructions

  1. Gather all ingredients.

  3. Place whole pork tenderloin into a slow cooker. Arrange potatoes around pork; pour sauerkraut and juice over pork and potatoes. Add 1 cup water, butter cubes, salt, and black pepper.

  5. Cook on Low until pork is tender, 8 to 10 hours. Add more water after 8 hours if mixture seems dry.

Living in Dutch country PA heard about this from local friends and had to try it. I’m not normally a fan of sauerkraut, but this was a hit, especially with carrots and potatoes. I should have added salt to begin with, but a little on your plate does just fine. Best is the slow cooker method. I was even running late this morning but still found a few minutes to throw this in the crockpot and run. (Don’t forget the water!) Came home to a warm, hearty dinner and a house that smelled amazing. Definitely make again.

Very similar to my mom’s recipe from the 1970’s, I substituted a bottle of beer instead of water and added a whole apple to cook along the potatoes and pork. I also used lemon pepper not plain black pepper.

Budget-friendly very tasty easy to make great to do before going to work leave on low and let cook when you come home dinner is done. 2 out of 3 people liked it so I will be making it again. The only thing I changed is I added a small handful of brown sugar to cut the bitterness if the sauerkraut just a bit. My mom used to do that. Look forward to making the rest of these recipes.

Made this as directed today [doubled] but am confused why there is a “standby” cup of water. The pork and sauerkraut have lots of liquid…by hour number 8 my sauerkraut was already done and everything was swimming in liquid. Flavor is fantastic and I’ll cut back on the butter next time…and maybe add more pepper. Thank you for sharing!

I made this without the potatoes. Added extra sauerkraut and an apple As suggested by another person. I think it could’ve had more flavor to it and if I make it again I will add more seasonings. The pork ends up being pulled pork because it is so well done. I might make it again.

So simple ans so good! I adjusted it down to 2 servings but kept the same amount of sauerkraut. I forgot to add water but it turned out perfectly!

This was super simple and delicious for a New Year’s Day meal. I increased the sauerkraut (two 16 oz packages) and added extra peeled and quartered potatoes. Cooked on high for 4-5 hrs and it was perfect. I forgot to add the water, but there was plenty of liquid and better flavor without it!
