Slow Cooker Pineapple Chicken

This recipe for pineapple chicken thighs in the slow cooker is a family favorite. paired well with rice. For more tang and flavor, stir in 3 to 4 teaspoons of your preferred ginger-carrot salad dressing.

Ingredients

  1. 1 cup all-purpose flour, or as needed
  2. 4 chicken thighs, trimmed
  3. 1 cup pineapple chunks
  4. ¾ cup pineapple juice
  5. ½ cup soy sauce
  6. ⅓ cup brown sugar
  7. 2 tablespoons ketchup
  8. 1 clove garlic, minced

Instructions

  1. Put flour into a shallow bowl. Dredge chicken thighs in flour to coat; tapping thighs to remove excess flour.
  2. Arrange chicken thighs in the bottom of your slow cooker crock; top with pineapple chunks.
  3. Whisk pineapple juice, soy sauce, brown sugar, ketchup, and garlic together in a small bowl; pour over chicken and pineapple in the slow cooker.
  4. Cook on Low for 4 hours.

Starting to like Slow Cooker recipes. I omitted the flour after reading here that it became sift and broke away. I added a couple squirts of Siracha chile sauce and subbed BBQ sauce for Ketchup. Also used 1/2 cup brown sugar instead of 1/3 cup. It tasted really good. and had a little punch to counter the sweetness. Used the extra sauce on rice although it was watery, still good though. Will definitely male again, next time without Siracha sauce and will add water chestnuts.

Many people said there taste was flat. I agree. Next time I will add some red bell pepper and fresh ginger. My husband loved it just the way it was.

My family loved this meal! I doubled the meat and used Truvia brown sugar as we’re cutting back on sugar. Might even cut back some more as it was definitely sweet. Before serving I thickened the sauce with some cornstarch. At my daughter’s suggestion we added cashews on serving and some black pepper. Wonderful! My son said this one gets added to the rotation (high praise).

I used boneless chicken breast and omitted the minced garlic, maybe next time add salt and pepper to the flour for extra seasoning otherwise was great!

I decided to give this a try because my hubby and I love pineapple and I’m always looking for crockpot recipes. I made it exactly as written minus the flour part because I ran out of time before work. So I just threw everything in the crockpot and let it go, it was good. Everyone liked it, I made some chicken and garlic ricearoni to go with and it was good. I just feel like it was missing something, something to add a bit more flavor. It was slightly sweet and slightly salty. Maybe I’ll add something next time to jazz it up, maybe like that salad dressing that was suggested.

Made this using 4 boneless skinless thighs. Used all the pineapple chunks in a 20 oz can (the pineapple juice in the can also supplies the juice you will need). Cooked it 5 hours on low in a large slow cooker. Chicken came out juicy with the right amount of flavor for me. May add some bell pepper to it next time for a little color and different taste. Served it up with white rice and Steamers Asian Medley veggie mix. Easy and good!

We used chicken breasts instead of thighs (because that’s what we had in the house) and used bbq sauce in place of the ketchup but otherwise exactly as the recipe said. It came out fantastic. Will definitely be making again!

Didn’t make any changes, perhaps I should have , however . Was very sweet, which, in fairness, was probably my fault, as I used pineapple in syrup, instead of juice. Chicken was, indeed, tender, but skin was too flimsy; I removed it prior to serving. If I do make it again, I will add a green pepper, mushrooms.
