Slow Cooker Lentil Soup

The slow cooker is ideal for this lentil soup. Simply place all the ingredients in the slow cooker in the morning, and enjoy a lovely soup when you get home.

Ingredients

  1. 7 cups water
  2. 1 pound cooked, smoked lean ham, cut into chunks
  3. 1 (14.5 ounce) can low-sodium diced tomatoes, undrained
  4. 1 ¾ cups dried lentils, rinsed
  5. 8 ounces chopped onion
  6. 6 ounces sliced carrots
  7. 6 ounces chopped celery
  8. 5 cloves garlic, minced
  9. ½ teaspoon ground black pepper
  10. ½ teaspoon salt (Optional)
  11. ½ teaspoon dried thyme, or more to taste
  12. 1 bay leaf

Instructions

  1. Combine water, ham, tomatoes, lentils, onion, carrots, celery, garlic, pepper, salt, thyme, and bay leaf in a slow cooker.
  2. Cover and cook on Low until lentils and vegetables are as soft as you like, 6 to 8 hours. Remove bay leaf before serving.

This was an easy recipe. I added all ingredients to my slow cooker and left it. Very flavorful and filling. I added salt after it was done cooking..adding salt to lentils before they’re done could keep them hard and uncooked. I definitely will make this again. I think next time I will add zucchini or different veggies.

I used no salt chicken broth in place of water, tasted it half way through cooking and found it a bit on the thin side so I added a can of Canelli beans but mashed about 1/3 of the can to thicken it up.Other then that a good soup, and lots of leftovers so I filled a few containers and froze it for another day.
