excellent replacement for mashed, baked, or fried potatoes! The combination of vegetables and starches in one meal is fantastic! Furthermore, it is vibrant, which enhances your presentation nicely!

Ingredients

  1. 3 tablespoons unsalted butter
  2. 1 cup chopped onion
  3. 1 (20 ounce) package refrigerated hash browns (such as Simply Potatoes®)
  4. 1 (10.5 ounce) can condensed cream of mushroom soup
  5. 2 cups shredded sharp Cheddar cheese, divided
  6. 1 cup sour cream
  7. 1 teaspoon garlic powder
  8. 1 teaspoon salt, or more to taste
  9. ½ teaspoon freshly ground black pepper, or more to taste
  10. 1 tablespoon sliced green onions, or to taste

Instructions

  1. Line a slow cooker with a slow cooker liner or spray with cooking spray.
  2. Melt butter in a skillet over medium heat and cook onion until soft and translucent, 5 to 6 minutes.
  3. Place onion, hash browns, mushroom soup, 1 1/2 cups Cheddar cheese, sour cream, garlic powder, salt, and pepper in the slow cooker. Stir until well combined.
  4. Cook on High until hash browns are tender, 2 1/2 to 3 hours. Top with remaining 1/2 cup Cheddar cheese and cook until cheese is melted, 15 to 20 minutes. Top with green onions.
  5. For an added kick of spice, replace 3/4 cup Cheddar cheese with jalapeno Jack cheese.

This was delicious. Made it exactly as written except used two teaspoons of garlic puree as opposed to the garlic powder. Onion was smallish so it didn’t feel like too much. Used Western Family Shredded Hashbrowns and in no way were they at risk of becoming mush, as another reviewer reported. So this is to say that they could have definitely cooked longer than the 3 hours as I found the potatoes to be a little more firm that I would have liked. I will definitely be doing these potatoes again. Thanks for the great recipe!

I made it according to recipe though I couldn’t find the exact potatoes. I used Wegmans brand O’Brien Hash Browns. I really enjoyed making and love the name…it’s a thing! My teenager, dad and I ate em up.

First time making funeral potatoes. Came out delicious but I wanted to make a meal not a side. I cut up three small chicken breast into bite size pieces and cooked low with the onions in a fry pan first. I didn’t have a bag of hash browns so I grated my own potatoes. This came out so tasty my husband and brother loved it as I also did. Will try making this in the oven next time to see what the difference is.

This is a family favorite recipe we call “Church Potatos”. Never tried them in a crock pot, we just bake them in the oven, but everyone loves them and request them for family gatherings. Will try crock pot next time!

First of all so illogical to rate a recipe just by it’s name. No help at all. I actually made this. Gave it a four because of two things: too much onion- suggest a half cup, I did it on low for 3 hours and it was fine not mushy. Folks at least try the recipe before you rate it.

I think a “funeral” recipe must be one that can be stored safely at the home of the bereaved WITHOUT refrigeration. For obvious reasons. And this one cannot. For obvious reasons. “nuff sed.”

Worst recipe I’ve used in a long time! Mush is the result! Who cooks shredded potatoes for almost 3 hours in a slow cooker. OMG, these are not good

I love this!! The only thing I will do differently next time is lessen the amount of onion or use a much smaller one. I love onion, but it was a bit too much even for me. Might try adding a little ranch and diced ham in next time as well, but it’s honestly really good as is otherwise.
