Slow Cooker Chicken with Apples and Honey

Although most of the dishes I see lack meat, I’ve always wanted to try spaghetti squash. Meat is something I like. Having said that, I used ground chicken to keep it wholesome. Even my 5-year-old, who despises vegetables, loved it when I prepared it for my family, but I did let him know it was simply spaghetti.

Ingredients

  1. 1 (1.5 pound) package small yellow-fleshed potatoes
  2. 3 pounds skin-on, boneless chicken thighs
  3. 3 small apples, peeled and diced
  4. ½ medium sweet onion, diced
  5. 1 cup chicken broth
  6. ½ cup honey
  7. ⅓ cup applesauce
  8. 1 clove garlic, minced
  9. 1 teaspoon salt
  10. ½ teaspoon ground cinnamon
  11. ½ teaspoon ground cumin
  12. ¼ teaspoon ground black pepper

Instructions

  1. Chop any large potatoes in half.
  2. Place potatoes in the bottom of a slow cooker. Add chicken thighs on top of potatoes, and spread apples and onion over top.
  3. Mix chicken broth, honey, applesauce, garlic, salt, cinnamon, cumin, and pepper together in a bowl; pour over chicken mixture.
  4. Cook until chicken is no longer pink at the bone and the juices run clear, 4 to 6 hours on Low, or about 3 hours on High. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).
  5. Set an oven rack about 6 inches from the heat source and preheat the oven’s broiler. Line a baking sheet with aluminum foil.
  6. Remove chicken thighs from the slow cooker and place, skin-side up, on the prepared baking sheet.
  7. Broil in the preheated oven until skin is crisp, 3 to 5 minutes. Serve with potatoes, apples, onions, and sauce.

I follow the recipe. I used chicken thighs and chicken breasts. I cooked it on high for 3 hours. I put the chicken under the broiler for 5 minutes. The chicken was dry, so adding the sauce helped that. I was not as tasty as I would have liked it to be. Apples , honey and cinnamon. I expected it to be sweeter. We all ate it. It was okay. I shredded the leftover chicken. I am going to make BBQ chicken. I would give it two stars.
