Slow Cooker Beef Stew

Ingredients

  1. 1 cup plus 3 tablespoons all-purpose flour
  2. Salt and freshly ground black pepper
  3. 2 1/2 pounds boneless chuck, cut into 1-inch cubes
  4. 4 slices bacon
  5. 3 tablespoons olive oil, optional
  6. 3 tablespoons butter
  7. 2 tablespoons tomato paste
  8. 3 cups beef broth
  9. 1 pound baby multi-colored beets with tops, peeled and tops removed
  10. 1 pound rainbow carrots with tops, peeled and tops removed
  11. 1 pound multi-colored Peewee potatoes
  12. 1 pint Brussels sprouts, chopped
  13. 2 cups good red wine
  14. 1/2 cup fresh parsley
  15. 2 teaspoons Worcestershire sauce
  16. 1 teaspoon whole allspice
  17. 5 cloves garlic
  18. 3 bay leaves
  19. 1 medium onion, chopped

Instructions

  1. Put 1 cup of the flour in a shallow bowl and season with salt and pepper. Dredge the beef in the seasoned flour and set aside.
  2. Heat a heavy skillet on medium-high heat, add the bacon and cook until crisp. Set the bacon aside, leaving the drippings behind in the skillet (chop the bacon and reserve for serving). In batches, brown the beef in the skillet, adding olive oil if necessary, about 3 minutes per batch. Transfer each batch to the slow cooker as it browns.
  3. Add the butter and remaining 3 tablespoons flour to the skillet. Cook 3 minutes, stirring with a whisk. Whisk in the tomato paste. Turn off the heat, pour in the beef broth and whisk to get all the ingredients incorporated with the brown bits from the bottom of the skillet. Add the mixture to the slow cooker.
  4. Add the beets, carrots, potatoes, Brussels sprouts, red wine, parsley, Worcestershire, allspice, garlic, bay leaves and onions. Set the cooker to low and cook for 8 hours.
  5. Serve in bowls sprinkled with the reserved bacon.

Let me start by saying, I like beets, love brussel sprouts and am always open to new recipes.  It smelled fantastic while it was cooking and couldn’t wait to try it.  However, it just didn’t do it for me.  We rarely throw out leftovers but just couldn’t keep this one as is.  We fished out the beef and potatoes & carrots and tossed the rest.  I’m guessing that will get tossed in a day or two without even a nibble.  Don’t waste your time on this one.

My family loves this stew.  I would never have thought to put beats and brussels sprouts in a beef stew, but this turned out delicious.  It’s definitely not our everyday stew as it is a little pricey to make, but It’s a good one for special occasions.  We’re making it for Christmas dinner this year.

What a wonderful recipe and extremely easy.  It was very tasty and super convenient in the slow cooker.  I made this as a meal for my family and parents and EVERYONE enjoyed it as a matter of fact everyone had seconds and there was nothing left 🙂

I have been disappointed recently in my slow cooker beef stews. I made this and I thought it was delicious! I didn’t have brussel sprouts so I left those out but did all the rest. It was rich and tasty. I never thought to put beets in a beef stew which turned out great to my surprise. I also did not have worchestshire sauce so I googled substitutes for this item and added molasses, fresh ginger and balsamic vinegar. The family loved so I guess I will just keep that as is next time. I guess I did feel like it was missing something healthy and green but that’s not the recipes fault.

This is absolutely HORRIBLE! I followed this recipe to the T…… Right down to every detail including rainbow carrots and a mixture of red and golden beets, and even MULTI colored baby potatoes….. The outcome…. YUCK!! How can I ever trust the show again…. You all know very well it tasted horrible!! This is not even salvageable! What a waste of 2 hours prep and 50.00!! I never comment but felt I owed it to the rest of you to save your money! I even had to drive half hour into the city just to find the unique ingredients…. So not only wasted my whole day then wasted hours prepping that night! Im a beet, carrot and Brussels sprouts lover too. I am so sad to have wasted all this stuff! 🙁

Best stew EVER! Full of flavour with rich gravy. Overflowing with vegetables you don’t find in most stew recipes.
