Slow Cooker BBQ Chicken Pizza Soup

In soup form, this is a real BBQ chicken pizza. On a chilly fall day, a hearty bowl of goodness is created with corn, chicken, red onions, cilantro, and sweet and sour BBQ sauce. With excellent results, I’ve also used frozen chicken cutlets in this. You can use anything you have on hand!

Ingredients

  1. 8 cups chicken broth
  2. 4 skinless, boneless chicken breast halves
  3. 1 (24 ounce) package frozen corn
  4. 1 red onion, diced
  5. 1 ¼ cups barbeque sauce
  6. 4 cloves garlic, minced
  7. 1 ½ teaspoons salt
  8. ½ teaspoon ground black pepper
  9. ½ teaspoon garlic salt
  10. ½ cup shredded mozzarella cheese, or to taste
  11. ½ cup chopped fresh cilantro, or to taste

Instructions

  1. Combine chicken broth, chicken, corn, onion, barbeque sauce, garlic, salt, black pepper, and garlic salt in a slow cooker.
  2. Cook on Low for 5 hours. Remove chicken from slow cooker and cut into bite-size pieces; return to slow cooker and stir.
  3. Ladle soup into serving bowls and top each serving with mozzarella cheese and cilantro.

My kids devoured this!! Made it as a play on having pizza for dinner in a bowl. I baked some biscuits for them to soak up the broth and it was a hit!! Nobody was mad at me lol Will be making this again

This was good and super easy. I did reduce the bbq sauce by 1/4 C and added a can of baked beans for more bulk. Husband loved it!

This was definitely NOT a good recipe. I think it’s mainly Bc BBQ sauce doesn’t belong in a soup. I will not make this again

We thought this was really good….definitely a different take on chicken soup. I will make this again, though next time I will add more chicken and thicken the broth just a bit.

My kids LOVED this!! I used sweet Baby Ray’s hickory and brown sugar BBQ sauce. This makes a TON. In fact, I have enough for their lunches for tomorrow. It was super easy to make. I didn’t deviate from the recipe. I felt like there was a bit too much corn though- but that is easy to fix.
