Family-style serving of sloppy joes!

Prep Time: 15 mins
Cook Time: 40 mins
Total Time: 55 mins
Servings: 10
Yield: 2 9×13-inch casserole

Ingredients

  1. 1 pound ground beef
  2. ½ onion, diced
  3. 1 teaspoon minced garlic
  4. 1 (15 ounce) can whole kernel corn, drained
  5. 1 red bell pepper, diced
  6. 1 (24 ounce) jar Sloppy Joe sauce
  7. 4 tablespoons cream cheese, softened
  8. 1 teaspoon smoked paprika
  9. salt and ground black pepper to taste
  10. 2 cups shredded Cheddar cheese, divided
  11. 1 (32 ounce) package frozen bite-size potato nuggets (such as Tater Tots®)

Instructions

  1. Preheat the oven to 450 degrees F (230 degrees C).
  2. Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain any fat and set beef aside.
  3. Saute onion and garlic in the same skillet until translucent, 3 to 5 minutes. Add corn and bell pepper; cook until soft, 5 to 10 minutes. Return beef to the skillet. Stir in Sloppy Joe sauce, cream cheese, paprika, salt, and pepper. Simmer over medium-low heat until sauce is heated through, about 5 minutes.
  4. Pour the beef mixture into a 9×13-inch baking dish and spread evenly. Top with 1 cup Cheddar cheese. Arrange potato nuggets over the top. Sprinkle remaining Cheddar cheese on top.
  5. Bake in the preheated oven until the potato nuggets are crispy and golden, about 25 minutes. Serve hot.

Turned out great!! Everyone went back for 2nds, and we still have enough for leftovers! Only thing I did different was use my own sloppy Joe sauce and omitted the paprika. Definitely making this again!

I thought it was great. Not a big hit with my husband, though. I think a lot depends on which sloppy joe mix you use. Next time, I’ll try a different brand.

My fiance made this for us the other night and it was exactly the kind of soul food we needed for a quick meal after a long week. This recipe is brilliant in its simplicity. We will be making it again. Thank you KelseyS!

I am allergic to cheese so used a cheese substitute and also have vegetarians in the house so used Morning Star Chorizo Crumbles. It was so delicious that everyone wanted 2nds and 3rds and it is now a part of our rotation.

The wife and I just loved this recipe. It was zesty and had a much nicer flavor to it compared to an old standard that we had grown up with. We look forward to sharing it with our college-aged sons who are looking for simple, make-at-home meals.

I substituted my mother’s BBQ recipe for the Sloppy Joe canned mix.
