Sloppy Joe Baked Potatoes

Ingredients

  1. 4 russet potatoes
  2. 2 tablespoons unsalted butter
  3. 1 small onion, finely chopped
  4. 1 carrot, finely chopped
  5. 1 stalk celery, finely chopped
  6. 1 pound 93 percent lean ground turkey
  7. Kosher salt and freshly ground pepper
  8. 1/2 cup ketchup
  9. 1/3 cup sweet chili sauce
  10. 1 tablespoon chili powder
  11. 1/4 teaspoon garlic powder
  12. 1/2 cup shredded low-fat cheddar cheese (about 2 ounces)

Instructions

  1. Pierce the potatoes in a few places with a fork; place on a microwave-safe plate and microwave until tender, turning once, about 15 minutes. Set aside.
  2. Meanwhile, melt 1 tablespoon butter in a large skillet over medium heat. Add the onion, carrot and celery and cook, stirring occasionally, until the vegetables are tender, about 7 minutes. Add the turkey and 1/4 teaspoon each salt and pepper; cook, breaking up the meat with a wooden spoon, until no longer pink on the surface, about 5 minutes. Stir in the ketchup, chili sauce, 1/2 cup water, the chili powder and garlic powder; continue cooking until the meat is cooked through, 3 to 5 more minutes.
  3. Split the baked potatoes open lengthwise, dot with the remaining 1 tablespoon butter and gently fluff the flesh with a fork. Top with the turkey mixture and sprinkle with the cheese while still hot.

Delicious! I didn’t have chili sauce on hand so used sweet bbq sauce. It came out great!!! I will be adding to my regular menu rotation. I will use the sloppy joe recipe for sandwiches also.

Great for kids! An easy-to-make certain crowd pleaser. We’ve even made it for family that won’t eat carrots and celery by pureeing those veggies.

It’s definitely a different taste than out of the can sloppy joe but it’s still good and just a hint of sweet (depends on your sweet chili sauce). Overall a fairly quick and easy meal. Microwaving the potatoes turned out great and much faster than the oven. At first I thought the serving size for the sauce was too much but in fact it wasn’t, perfect 4 servings. Next time I would add a little bit of freshly diced jalapeno like one user suggested for more flavor/kick and sprinkle a little salt on the halved potatoes before the sauce. Served with italian bread which is also great to dip in the sauce.

it turned out so good. I made the Sweet Chili sauce from scratch and the dish turned out amazing. will definitely make this again. so much better from the can!

Loved the idea for this dish! Since I am not a huge meat eater I subbed in Veggie Ground Round for the turkey. I also added in a fresh diced jalapeno to the mix, along with some cayenne to give it more kick, and baked the potatoes in the oven at 375 for 50 min. Everything turned out great and was super delicious and flavorful! I served it with a simple green salad to lighten things up. Would definitely make again!! Thanks FoodNetwork Magazine for the awesome idea!

The sloppy joe mix is a bit sweet, but it tasted great! Nothing like the canned stuff. It’s fine on the potato, and even better on a toasted roll.
