After the holidays, try this simple and delectable recipe with any leftover eggnog. For holiday guests, it’s also a simple breakfast to prepare.

Ingredients

  1. 3 large eggs
  2. ¾ cup whole milk
  3. ½ teaspoon vanilla extract
  4. ¼ cup white sugar
  5. ¼ teaspoon salt
  6. ½ cup all-purpose flour
  7. 2 tablespoons unsalted butter
  8. 1 cup sliced fresh strawberries

Instructions

  1. Preheat an oven to 425 degrees F (220 degrees C).
  2. Place the eggs, milk, vanilla extract, sugar, salt, and flour into a blender. Pulse until no dry lumps remain in the batter. Melt the butter in an 8-inch, cast iron skillet over medium-high heat. Pour in the batter, and drop in the strawberries.
  3. Place the skillet into the oven, and bake until puffed and golden, 20 to 25 minutes. Remove from the oven and serve immediately.
  4. Cinnamon: add 1/2 teaspoon of cinnamon to the batter. Skip strawberries.
  5. Apple: slice 1/2 an apple and cook it on the melted butter until lightly golden. You may add a pinch of cinnamon to it. Skip strawberries.
  6. Blueberry: use 1/2 cup of blueberries instead of strawberries.
  7. Banana: add 1 sliced banana to the melted butter and cook it until golden, but still firm. You may add a pinch of cinnamon to it. Skip strawberries.
  8. Chocolate chip: add 1/2 cup of your favorite chocolate chip to the batter in the skillet. Skip strawberries.
  9. Chocolate: add 1 tablespoon of cocoa to the batter.
  10. Plain: skip strawberries and top baked pancake with a squeeze of lemon juice and powdered sugar.

Stick to 2 eggs. All else the same. Use glass pie pan and melt butter in oven while preheating. Good topped with Nutella. Also good with blueberries instead of strawberries topped with brown sugar cinnamon butter.

Delicious! I used gluten-free baking flour hoping to have a family breakfast that my husband could also eat. We all loved it! In fact, my kids were disappointed that there was enough for seconds. I used 2 eggs as recommended. I added strawberries and half of a thinly sliced nectarine. This is definitely going to remain in the breakfast rotation! Thank you for the recipe

This pancake looked and smelled good, but the strawberries made it kind of soggy. We’re at altitude and I probably needed to cook it a bit longer. That said, one family member really liked it. The rest of us thought it was a bit bland, so I would definitely add a LOT more spice / flavor if I made it again. The strawberries were nice though.

As the oven preheated, I warmed the cast iron in the oven and added the butter the last minute to melt. Topped with powdered sugar before serving. Delicious.

Used my 10″ skillet. So 4 eggs, 1 cup of flour. Just add 25% more of each. Then I baked for the full 25 minutes. No problems with a soft smooth pancake full of berries!

Came out like the picture. I made a double serving since my pan was twice as big. My husband really loved it. I topped it off with powdered sugar but a little too soon because it melted and did not look super appealing, but it tasted good and I added more to the other pieces.

On looks alone it’s over the top! I added a sprinkle of confectioners sugar on the top before serving, and a little maple syrup really adds to the taste. I’ve heard similar recipes called German or French pancake. I’ll definitely make it again and try a variation.
