Skillet Scalloped Potatoes

Ingredients

  1. 2 tablespoons salted butter
  2. 6 to 7 medium Yukon gold potatoes, sliced thin
  3. 1 medium onion, sliced thin
  4. 3 cloves garlic, sliced
  5. Kosher salt and freshly ground black pepper
  6. 1 cup heavy cream
  7. 3 ounces sliced ham
  8. 2 cups shredded mild Cheddar
  9. Sour cream, for serving
  10. Sliced green onions, for garnish

Instructions

  1. Heat the butter in a large skillet over medium heat. When the butter has melted, add the potatoes, onion and garlic. Stir and cook until the potatoes and onions begin to soften, 6 to 7 minutes. Season with a good pinch of salt and pepper. Add the cream, then bring to a low simmer and cover. Cook until the potatoes are cooked through, another 6 to 8 minutes.
  2. Meanwhile, set the oven to broil and move the rack to the center.
  3. Remove the lid from the skillet and sprinkle the ham over the top followed by the cheese. Place the skillet under the broiler and watch until the cheese is melted and brown, about 5 minutes.
  4. Garnish with the sour cream and green onions.

I just don’t understand why people give low scores with no explanation of what’s wrong.  Furthermore, it’s obvious they didn’t even make it when they post scores while the show is still on and there’s no way they could have made it.  If you’re going to take the time to rate a recipe, please take a minute or two to post the pros and cons.  A rating with no explanation is useless!
