Ingredients
- 1 (10.75 ounce) can condensed tomato soup, divided
- 1 ½ pounds ground beef
- ½ cup dry bread crumbs
- 1 egg, lightly beaten
- ¼ cup chopped onion
- 1 teaspoon salt
- 1 teaspoon pepper
- ¼ cup water
- ½ teaspoon prepared yellow mustard
- ½ cup shredded mozzarella cheese
Instructions
- In a large bowl, mix together 1/4 cup of the tomato soup, ground beef, bread crumbs, egg, onion, salt and pepper using your hands. Shape firmly into two loaves.

- Heat a large deep skillet over medium-high heat. Brown the meatloaves in the hot skillet, then reduce heat to medium and cover with a lid. Simmer for about 25 minutes, or until meat is cooked through.

- Spoon the fat from the skillet, and stir in the remaining soup, water, and mustard. Top with mozzarella cheese, and let simmer uncovered for 10 minutes, stirring sauce occasionally.

We loved it. I was a bit skeptical, me being an old retired Army Mess Sgt. I added some hot sauce and the big W(can’t spell it) . It tasted great . All you have to do is “follow the recipe “
Ez but I use brown gravy instead of tomato soup and add ketchup to the meatloaf when mixing. Also try adding some beef chorizo to the meatloaf and sauté into the gravy to add some zing. Melt some sharp cheddar on the meatloaf when almost finished cooking.
Was just ok. Good in a hurry. But not as tasty as other meatloaf recipes.
I used spagetti sauce instead of tomato soup, yum.

I’m not a meatloaf lover but I made it for the family. The recipe looked easy and we all love Tomato Soup. I read the reviews and decided to go with the Tomato Soup. I added to the remaining soup can Yellow Mustard, Italian Seasoning, Garlic Powder and Onion Powder. Meatloaf and Tomato Soup is the way to go for my family. It’s delicious!
Easy recipe and tasty. I used the tomato soup base and added a small can of peas and some left over breakfast cottage potatoes to the final sauce in the skillet. It made a complete delicious meal.
Very Good! I loved that it was stove top preparation. I used roasted red pepper and tomato soup from Campbells, only because it was what I had, and we found the sauce flavorful. The meat stayed together in the pan, just one flip to brown then lid on for the 25 minutes. I will definitely make again, thanks for the recipe

I haven’t made it yet but want to add some comments. I’d probably add a small can of tomato sauce instead of the soup. I’d also add a small amout of sage and thyme. These herbs will definitely add flavor to this recipe. They always pair well with tomato sauce or ground beef. Great recipe though. I’ll be making it soon.

This is a great way to have meatloaf without using the oven, for the summer months. I did add some fresh basil and used brown mustard instead of yellow. It was delicious and easy. I may even make meatloaf this way in the winter time.
This was much better than our expectations. Like others I used Italian bread crumbs. Also used Dijon mustard because I won’t have yellow in the house! 2/3 recipe (1 lb of beef) was so good that the 2 of us ate it all at one sitting!
I did not use canned soup. used tomato puree. added 2 Tbs Worcester sauce and 1/2 cup of chopped kalamata olives. fantastic.
I added barbecue sauce to the top and doubled up on the cheese. Turned out fantastic.
Used ground turkey and marinara sauce. Cooked as directed and it was very good.
Made it exactly as written, and it was great. Didnt find the tomato soup taste to be overpowering, as some have said. My family loved it, said it was the best meatloaf I have ever made!
omg this looks amazing with mashed potatoes or french fries and peas. Love french fries and gravy. will skip the cheese though. i don’t want meatloaf parmigiana.
