I think my version of this substantial soup is significantly better and lower in fat than the restaurant meal it was modeled after after many tries and adjustments. Enjoy! Use low-fat sour cream and turkey sausage for a healthier alternative.

Ingredients
- 2 pounds chicken thighs, cut into bite-size pieces
- 1 pound andouille sausage, sliced
- 1 (12 ounce) package mirepoix (diced celery, carrots and onions)
- 2 (14.5 ounce) cans diced tomatoes, undrained
- ½ cup chopped green bell pepper
- 3 cloves garlic, minced
- 2 cups Swanson® Chicken Broth
- 1 tablespoon Cajun seasoning
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 pound uncooked medium shrimp, peeled and deveined
- 2 cups converted long-grain white rice
- 1 tablespoon chopped fresh parsley (Optional)
Instructions
- Combine chicken, sausage, mirepoix mix, diced tomatoes, bell pepper, garlic, Swanson® Chicken Broth, Cajun seasoning, thyme, and oregano in a slow cooker. Cook on High until chicken is tender, 4 to 5 hours. Stir occasionally. During the last 30 minutes, add rice and shrimp; stir to combine. Turn off slow cooker.
- Let stand, covered, for at least 15 minutes to allow rice to absorb most of the remaining liquid. Garnish with fresh parsley, if desired.
- Serve with a green salad & crusty bread, and be sure to have a bottle of hot sauce available for guests to add to their liking.

I liked it, others did not. I thought it was a bit bland. Next time I make it I’ll add more seasoning.
This is a great recipe! The first time I made this I followed the recipe except for adding in the rice and it was great. The second time I made it I mixed the rice in the slow cooker and it came out mushy. Definitely keep the rice separate.
This turned out really well overall. The flavor was great and pretty authentic. The only issue I had was that the rice wound up being a bit crunchy on the top and had broken down into a paste at the bottom, even though my husband stirred it about 5 times during cooking. Otherwise, it was tasty and I would definitely make it again.
Delicious. Simple. I added two tablespoons of creole seasoning and didn’t add the rice . Used fresh herbs from the garden and topped with fresh parsley. Served over brown rice. Lots of leftovers for the freezer.

I’m giving this recipe one star. It was simple to make but tasted terrible! I’m from Louisiana and maybe as a result, I’m used to jambalaya with more flavor. It tasted fishy from the shrimp and that flavor overpowered the rest.

I made this exactly as the recipe other than I cooked my rice separate and spooned the mixture over rice. It was absolutely delicious. Definitely will make this again!
So the base of this recipe is really good, however adding the rice into the crockpot turned it into a glutenous mush. I followed the directions but the rice got really mushy. Next time I will just make the base in the crockpot and make the rice separately.
The only things I changed were adding extra cajun seasoning, cracked black pepper and a dash of cayenne pepper. I also added more chicken instead of shrimp as my family does not like shrimp. Turned out delicious! Great recipe!
This recipe is delicious and very easy to make! My husband and I both loved it, and I will make this again many times. I shared it with my son and daughter-in-law and they enjoyed it too!

I made this, adhering to the written recipe. While it was cooking, it tasted almost TOO flavorful. I worried it would be too spicy, “flavorful” and grainy to my husband (who I was making this for). I kept on and added the rice, then the shrimp (according to the recipe timeline). After I tasted the final result it was SO bland! I wanted to pitch the whole crockpot’s worth, but, thought I’d let my husband try it. He, also, found it very bland and not to his liking. He (despite my protestations) has a friend he wants to give the rest of it to. I told him to NOT put my name on it. I wouldn’t recommend this recipe.

Made exactly as described and was perfect for the entire family. Very easy to make and was a huge hit. Not to spicy for the little ones and easy to add hot sauce or old bay to taste!
This was great! I will defiantly be making this again as my boyfriend and I are like pigs haha! Only thing I would change is the amount of oregano. There was just a little bit too much for my taste.
I made this for my family. I couldnt find mirepoix so i just chopped up onions, celery and carrots. I mixed it all up in the crockpot and had my son turn on low at 9 am. I came home at 6pm added the rice (uncooked) left it alone about 30 min and at last 15 added the shrimp. My family raved.
Quick question. Do you pre cook the rice? Is it 2 cups precooked, or 2 cups uncooked?
