Simple Cottage Cheese Pancakes

Ingredients

  1. 1 cup cottage cheese
  2. 3 eggs
  3. ¼ cup all-purpose flour
  4. 2 tablespoons melted butter
  5. ¼ teaspoon salt
  6. 1 teaspoon butter, or as needed
  7. ¼ cup blueberries, or to taste (Optional)

Instructions

  1. Strain cottage cheese in a sieve fitted over a bowl, pressing down occasionally, until cottage cheese has dried out, about 1 hour.
  2. Beat eggs in a medium bowl; add cottage cheese, flour, melted butter, and salt. Mix until just blended.
  3. Heat butter in a frying pan over medium-high heat; drop large spoonfuls of batter into the melted butter. Sprinkle blueberries into batter. Cook until lightly browned, 2 to 3 minutes per side.

Loved this recipe. I didn’t drain the cottage cheese. Kept everything else the same. Added sliced strawberries when serving. I love cheese blitzes. These taste as good. Great for a brunch.

I loved it when I used bananas vs blueberries. I love blueberries but the pancakes taste like a cheese blintz. I threw those away and mashed a banana and put it directly in the batter. They are delicious. I had no problem flipping them at all.

Didn’t drain the cottage cheese. Had no problems flipping. My only complaint was that the pancakes were not filling. I guess because it’s low carb, but they didn’t fool my stomach. I had mine with maple syrup. Tasted great.

We love these! We don’t dry out the cottage cheese though, just throw it right in and add some Blueberries! Works great and we like the flavor more than “traditional” pancakes. Best low carb pancakes on Allrecipes!

Turned out very runny so I had to add flour. I will try blending the cheese first to make it smoother as well. We added bananas and vanilla. They tasted food, just thinner than expected.

Great recipe! Didn’t have time to drain the cottage cheese but i don’t think that mattered much. Recommend spraying the spatula with cooking spray. They can be tricky to flip.

These were good, I added a bit of coconut flour to thicken the batter more and they turned out better 2nd time. The batter should be a little thicker than regular pancake batter before frying. I fried in coconut oil and topped with raw organic honey. I plan to these make again.

I’ll try it again, but next time I’ll actually strain the cottage cheese and drop it by the spoonfuls like it said. Stuck terribly to the skillet, too, when I broke it up into smaller pieces to flip.

Pretty good. Does need to cook quite a while at 350 degrees to overcome the moisture, even w/ straining the cottage cheese (which I like as a great source of low fat protein). Added a few blueberries for sure (adding to the moisture). A dash of cinnamon and couple drops of vanilla helped the flavor as well. Will fix again.

These were good. Turned out good. A bit flat but I didn’t care. Taste is somewhat blah but based on the ingredients this wasn’t a huge surprise. I added a bit of vanilla. A person could add more depending on what you wanted to use them for. Overall they were a great low carb option.

I loved them plain but because I was craving syrup I used about a teaspoon of organic syrup on my plate for the second pancake and drug it over the syrup as an added treat
