In this incredibly simple 5-ingredient dish, restaurant-quality steaks are first seared in a cast iron skillet on the stovetop before being completed in the oven.

Ingredients

  1. 2 (8 ounce) strip steaks
  2. 2 tablespoons unsalted butter, softened
  3. 1 tablespoon soy sauce
  4. coarse sea salt and ground black pepper to taste
  5. 2 tablespoons canola oil, or to taste

Instructions

  1. Preheat the oven to 450 degrees F (230 degrees C).
  2. Set steaks out at room temperature for 10 minutes. Then season both sides with salt and pepper.
  3. Heat oil in a cast iron skillet over medium-high heat until shimmering. Place steaks into the hot pan and cook until a nice crust forms, 2 to 3 minutes per side.
  4. Transfer skillet to the preheated oven and cook for 5 minutes. Remove from the oven and transfer steaks to a platter. Cover with aluminum foil for 5 to 10 minutes.
  5. Combine butter and soy sauce. Serve steaks topped with butter mixture.
  6. Use your favorite cut of steak.

Simple and delicious but as written this was overcooked by 5 minutes or more and I like my steaks medium-well. Adjust accordingly.
