Ingredients
- 3 pounds whole sweet potatoes, pricked with a fork
- salt and ground black pepper to taste
- ½ cup buttermilk
- ½ cup whole milk
- 6 tablespoons butter, softened
Instructions
- Preheat the oven to 425 degrees F (220 degrees C). Adjust an oven rack to the upper-middle position. Line a baking tray with aluminum foil.
- Bake potatoes on the prepared tray in the preheated oven until tender, 45 to 60 minutes. Peel when cool enough to handle.
- Purée peeled potatoes in a food processor until smooth; season with salt and pepper. With the motor running, add buttermilk and milk gradually through the feeder tube, then butter. Continue processing until silky smooth.

I didn’t have any milk. It was still perfect.
This did NOT disappoint! I used 2 huge sweet potatoes, 2.5 lbs, baked as instructed and then in the food processor. I dribbled whole milk in while pulsing. I then added about 2 TBSP buttermilk. It made a bit tangy which I liked. I only used total about 1/3 C milk combined. I jazzed it up with chopped toasted pecans just cuz the hubs loves them. May sprinkle on a bit of brown sugar . But these are GREAT without anything else!!! So excited I found a new make-ahead for the holidays!!! ??????. It will be hard not to sneak tastes before dinner tonight.

This is an amazing dish! I had to make my own buttermilk, easy peasy. I used half the butter and still found that too much, next time I will leave it out. Baking the sweet potatoes at such high heat almost caramelized them, so they were very soft and very sweet. I think this dish will become a regular on my table.

I just made this and will serve with ham steak in a little while. I baked 1 yam (the orange variety) at 425 deg. for 45 minutes, according to instructions. I didn’t peel it; I put the whole potato into the Vitamix with 1/3 c. whole milk and 2 Tbsp. softened butter, salt and pepper (the ingredients cut by 1/3.) I licked the spatula, and I can tell you this is restaurant quality. I didn’t add any ingredients. Enjoy, you Vitamix enthusiasts!
I made this according to the directions (except I used 6 Ready to Microwave Baking Sweet Potatoes and then used the mixer to blend.) These were delicious and had a wonderful texture! My family loved this recipe and my daughter that LOVES sweet potatoes (baked only) couldn’t get enough of them!
