Sicilian Cake

Ingredients

  1. 2 pounds ricotta, drained well
  2. 3/4 cup sugar
  3. 2 cups heavy cream
  4. 2 teaspoons vanilla extract
  5. 1/4 cup dark rum
  6. 1 can (20 ounces) crushed pineapple, drained well
  7. 3 packages ladyfingers
  8. Chopped walnuts, semisweet chocolate chips, and glaceed cherries for garnish

Instructions

  1. In a large bowl with an electric beater, beat the ricotta and sugar until combined well. Add the heavy cream, vanilla, and rum and continue to beat until thick and smooth. Stir in the pineapple. Line the bottom and sides of a buttered 9-inch springform pan with some of the ladyfingers, top with one third of the filling, and cover with half the remaining ladyfingers. Add half the remaining filling, cover with the rest of the ladyfingers, and top with the last of the filling. Sprinkle with walnuts, chocolate chips, and glaceed cherries. Cover the cake with plastic and chill overnight. Run a knife around the inside of the pan and release the sides. Transfer the cake to a serving dish.

This cake is not only delicious, but it makes a beautiful presentation. It is easy to make and people will think you worked for hours. Yummy, Yummy, Yummy.

I have been making this cake for the holidays for several years. The first time I make it I did not own a 9 in. springform pan. I used a clear glass trufle bowl. I lined the bowl with lady fingers, covering the bottom and one layer up the side. I then filled the bowl with about 1/2 of the filling (I use about 1/2 c of sugar and rum extract for the filling. I sprinkle some of the nuts and chocolate on the first layer. I then line the upper part of the bowl with the rest of the lady fingers, then the rest of the filling. I top it off with extra nuts, chocolate, and glazed cherries. This makes a gorgeous presentation!!!!

This was a wonderful recipe. I made it exactly as called for and I must say that everyone loved it. Not a crumb was left on the plate. I definitely will make this again. It was great at the holiday
