Shrimp Ceviche

Ingredients

  1. 1 pound high-quality medium raw shrimp, peeled, deveined, tail removed, cut into thin pieces
  2. 1 cup freshly squeezed lime juice
  3. 1 cup peeled, seeded and finely chopped cucumber
  4. 1 cup seeded and finely chopped tomato
  5. 1/2 cup chopped fresh cilantro
  6. 1/2 cup finely chopped red onion
  7. 1 serrano chile pepper, deveined, seeded and minced
  8. Kosher salt, for seasoning
  9. Saltine crackers
  10. Bottled hot sauce
  11. Lime wedges, optional

Instructions

  1. Place the shrimp in a large mixing bowl. Add 1/2 cup lime juice and let stand for 15 minutes so the shrimp can “cook” in the lime juice (any less and it won’t cook, any more and it toughens).
  2. Meanwhile, in a separate large mixing bowl, mix the remaining 1/2 cup lime juice, cucumbers, tomatoes, cilantro, red onions and serrano chile to incorporate evenly. Transfer the mixed vegetables into the shrimp bowl and mix well to incorporate. Season the ceviche with some salt. Serve with saltine crackers, bottled hot sauce and lime wedges if desired.

Wow, amazing 5 star restaurant taste!!! I could not recommend this more. I substituted mango for pineapple and it was off the hook!!! My family loved it, this appetizer was more of a teaser because people expected more of delicious flavors to come, obviously I didn’t make enough!!! Will make again but this time with double the amount!! Thank you for a fantastic recipe.

One reviewer said something about the cooking times, watch the video, you allow the lime to do the cooking!

Wonderful and delicious recipe. A bit spicy which we love in our house. Recommend to include some Avocado slices to subdue the acid.

Trust the science of cooking the shrimp in lime juice. 15 minutes was adequate; however, I did accidentally add the entire cup of lime juice, but once all mixed together it didn’t matter. I followed the written recipe; didn’t watch the video, added one jalapeño when I should have added two, and let it sit in the fridge until our dinner party in the evening. It’s a fresh, clean taste and everyone loved it.

Excellent , Made this last night and it was wonderful, but be careful how much you put of the lime juice you may need to cut back on it unless you want it really sour. And it needs to set 30 minutes, not 15 minutes. Well definitely make again!!!

Watch the video before you make this.  Only use 1/2 cup lime juice.  Be sure to make the salsa.  This was outstanding.  It took about 45 minutes to “cook” the shrimp.  15 minutes is inaccurate.

Good recipe. I topped with diced avocado because I love them but I think it helped mellow out the tartness
