Ingredients

  1. ½ pound sliced bacon
  2. ¼ cup butter
  3. ⅔ cup pine nuts
  4. 2 pounds Brussels sprouts, cored and shredded
  5. 3 green onions, minced
  6. ½ teaspoon seasoning salt
  7. pepper to taste

Instructions

  1. Place bacon in a large, deep skillet. Cook over medium-high heat until crisp. Drain, reserving 2 tablespoons of grease in the skillet, crumble and set aside.
  2. Melt butter with reserved bacon grease in the same skillet over medium heat. Add pine nuts; cook and stir until browned. Add Brussels sprouts and green onions; season with seasoning salt and pepper. Cook over medium heat until sprouts are wilted and tender, 10 to 15 minutes. Stir in crumbled bacon just before serving.

I used half the butter since adding the bacon grease. Otherwise, I followed the recipe. Served with ham and potatoes for family Easter dinner. The kids complained but still ate the “rabbit” food.

I’ve made this a couple times, I like them halved, and a lot more onions , 1/2 purple, and 1/2 yellow onion, added chicken/apple sausage thinly sliced, sliced mushrooms, the first batch I had old pine nuts and shouldn’t. Have, they are a bit hard to find so chopped up some walnuts, so this was our main side at thanksgiving as my wife is on a medical diet of no potato’s and with this recipe we didn’t even miss them , a new staple at our house

Excellent taste! Delicious! I’d give it 5 stars, but frying in bacon grease and butter negates any nutritional benefits of the Brussel sprouts. I’m allergic to butter so I used margarine. I also quartered the Brussel sprouts. I didn’t have any green onions so I used a minced yellow onion.
