Shoestring Carrot Fries

Total: 20 min
Active: 20 min
Yield: 2 to 4 servings

Ingredients

  1. 2 cups canola oil
  2. 2 teaspoons apple cider vinegar
  3. One 10-ounce bag shredded carrots
  4. Kosher salt
  5. 2 tablespoons finely chopped fresh mint
  6. 2 teaspoons orange zest

Instructions

  1. Put the oil in a medium pot and heat over medium-high heat until a deep-frying thermometer registers 325 degrees F. Line a plate with paper towels and put it next to the pot. Add the vinegar to a 3-ounce travel spray bottle and set aside.
  2. Line another plate with paper towels, put the carrots on the plate and pat with additional paper towels to dry thoroughly. This will prevent the oil from splattering when the carrots are added.
  3. Working in batches, fry the carrots until light brown and crispy, 2 to 3 minutes. Transfer to the paper towel-lined plate.
  4. Season the carrot fries with salt, sprinkle over the mint and orange zest and spray with a couple of spritzes of cider vinegar.

I’m not making a review but have a question.
Is there a way to substitute or omit eggs out of a recipe?
It’s because I’m sensitive to eggs and they make me fart and the burp smells real bad as if it was a fart.

These were amazing and a hit! I only added salt and the vinegar however, I had to fry them a lot longer than 2-3 minutes to get them crispy.

These are awesome, like a shoestring potato except a little sweet. We loved them.

So easy and delicious. Can’t wait to make this for my 2 year old granddaughter. If I can get her to taste it I think she’ll be hurt.

I’m not usually a big fan of non-potato fries.  I really don’t even care for sweet potato fries.  These, however, were delicious!  I will definitey be making them again.
