Instructions

  1. Combine 2 chopped tomatoes, 1 chopped cucumber, 1 chopped Italian frying pepper, 1/4 cup finely chopped red onion and 1/2 cup chopped parsley in a bowl. Toss with 3 tablespoons olive oil, 1 1/2 tablespoons lemon juice, 3/4 teaspoon kosher salt, and pepper to taste. Let stand 10 minutes before serving.

Wasn’t overly impressed with this… It was light and fresh tasting but I felt like it needed something more. I think the addition of fresh garlic, some sort of briny olives and/or some feta cheese would have pumped the flavor up a bit.
